Cooking For 20
« on: August 01, 2014, 08:09 PM »
Cooking for a few guests today using Jb's new base for my madras, it's been a long day but well worth the effort and time it takes.
Cooking on a large scale is not simple and all the prep is kind of an ass to do, saying that I loved every moment of it  ;D  I'm not normally a fan of eating my food while cooking for others but today I did eat.
The rice was a very nice addition to the flavours and had lots going on taste wise, Naan was soft and fluffy due to the added yeast and yogurt.

Photo 2 mushroom rice and veg.

Photo 3 veggie rice

Photo 4 Pilau Rice.

I will post more photos below as space is limited.

Madras was so so good with all the BIR flavour and subtle little kicks that make this work, also the BIR aftertaste was there for me. :)
I made two large pans of cooked Madras that worked out around 3 cubes per portion, along with the tandoor chicken there was plenty for all.

Tandoor Chicken I used Chewytikka's method and it was as good as ever, full of spice and flavour sprinkled with some methi,Lemmon and coriander it hit the spot.
Also two large platters.

Yes I have leftovers so will be tucking in to my fill of indian food tonight ;D

Photo 2 one of two pans of Madras made using Jb's new base that I fully recommend.

Great work lc , you deserve a very large ice cold crate of Coors to sit and drink on your own and relax and listen to some Cafe Del Mar. I hope your guests appreciated your efforts, well done indeed

Hi haldi thanks it's very simple madras recipe, that base gravy is Jb,s and my Madras I post up if you wish.
It all tasted as good as it looks very successfully meal.
Cooking in bulk really pushes you in the right way, and there is little time to over complicate things. :)

Thanks all for positive comments

Cooking 20 of the same curry must have improved your skill/technique levels , albeit very hard work

Looks very good lc. I find the cooking bit not too bad, its all the prep that's the pain.  :(
