Just got my feedback from this small function, I was told people were lining up to scoop up the leftover sauce ;D

Guess that's a Winner!

Hi Andy,  ;D all the spice in photo 3 went into the curry, along with a few other things not in the photo! But for anyone thinking you can say make 50 portions you can't just use 50 x the amount of spice and oil!! It won't work out!

You can see the spice to chilli powder ratio is way of what is normal.

Also getting your seasoning right is not straight fowards.

Thanks.

I've been waiting for this.

This is exactly the post that needs to be referred to in all of the preceding threads containing "discussions" about spicing levels for bulk cooking.

LC, perhaps you would be so kind as to further explain your ratios and proportions.

Thanks for the interest and personal messages  :) I'm away for a couple of days with the family, when I return I shall put up the ratios I used here.
Thanks LC

Hey LC, any chance of going here again? I've been lovingly recruited by SHMBO to prepare a bulk cook of some curries in 2 weeks time and I'd really like to know your rate of non-proportional spice variation for increased quantity.  I'll be cooking 2 or 3 different dishes plus rice and naan for 30 - 40 people.

Anybody else prepared to step up into littlechillies shoes to discuss this.. A question with more than 2 weeks notice and a PM without response is the sign of a dead forum in my opinion.
