Tamarind sauce my new friend

I've recently been using this tamarind sauce in my curries! Also in my tikka marinades instead of yogurt! An Indian chef told me he uses this method I've done what he says it adds a very impressive tang & taste to both curry and  marinades I use 2 X tsp! but don't use it in curry if already in marinade.

I love the taste of tamarind, but it gives me really bad acid so I try to avoid it. The last time I had it in a thai place I woke at 3 in the morning feeling like I'd drunk the contents of a car battery.

CAB - try it in a Madras and a splash of Worcestershire - you wont regret it mate

Try it with king prawns when using your tikka marinade, i wouldn't replace the tamarind for the yoghurt may be a tad too much but each to their own but if you really like tamarind lol.
I use Blades recipe and add tamarind with lemon juice, ginger and garlic paste for the first marinade and leave for around 20 - 25 mins then cook in a Tandoori oven.

has anyone tried the Chicken Tamarina video which I think was one of Julians?  I've tried it a few times and its excellent.  I generally use the Maggi brand of tamarind sauce, but I guess they are all very similar

Hi Rich will do! been putting it in most of my curries apart from the ones that have cream in them! not done madras yet!
