Chewy,

I've just cooked two chicken madras and I put the mix power and chill power in the tomato dilute and then added it to the pan and gave it a good sizzle.  End result tasted just as good as adding them separately and less chance of burning the spices. If I ever let the missus cook a curry this is the method I'll tell her to use.

I'm new to this obsession and I'm not familiar with lemon dressing, could someone please enlighten me?  Homemade would be best if possible since I live in Denmark and the grocery offerings are basic to say the least.

It's lemon juice, my friend, but made from concentrate, with additives to enhance the flavour/colour. It's a favourite amongst some of our more pretentious members ;)

It's a less intense lemon juice flavour so you could just use half the amount of real lemon juice.

Of course if you want to make a real Madras you wouldn't use any lemon juice at all!  ;)

hi SS but from my experience all the restaurant kitchens I have been in, all use lemon dressing! having also cooked the madras in rajver and having posted the recipe and method on here. but then again I guess it is whatever floats your boat and where you are regionally! otherwise it is just a mild curry with extra chilli powder lol and no Worcester sauce insight!

It's a favourite amongst some of our more pretentious members ;)

That'll be me then  :).  Just looked at my bottle and had a swig and its just watered down lemon juice.

The madras from my TA still comes with a wedge of lemon in it. Chef's been there for 30 years.

Cool!  Thanks... that's much easier than I expected.  I cannot believe the lengths I go to here to create the simplest of dishes from what's available.
