Jb's mix powder

(As taught on my recent cookery lessons)

Ingrediants(All Rajah brand)
---------------

100g mild madras curry powder
100g Paprika
200g Haldi(Turmeric)
100g Dhaniya(ground coriander)
100g chilli powder
50g jerra(cumin)
50g Gram Masala

Used in most dishes this is his unique blend he uses in his restaurant.Nothing unusual, in fact similar to most already on this site.

also, as you say, reassuring to note that the spice mix contains the usual suspects!

i needed to make this to make jb's tikka.

the only trouble for me is that i only have natco extra hot chilli powder - which i like but is too hot to use in the spice mix for the family (i use small qty's for them ~ 1/4 tsp).

i would normally add the chilli powder separately at cooking time. i like the ease of having it in the mix powder though.

on taste it tastes fine - can't say it's anything different to what i've used before (Derek Dansak, Dipuraja come to mind).

i don't question jb's posts or his source but mix powder is something that i'm currently sceptical on. so much so i intend asking my local TA for a sample. i've been wrestling with my gap and mix powder just won't go away.

the difference in the colour of the photo's does not help either.

It's unlikely that a spice mix from somewhere else will give the same colour as JB's mix.
Just look at the difference between Rajah and East End Garam masalas
One is grey the other brown

Haldi,

does give some comfort that mix powders are what they say on the tin. i used East End garam (ashoka) which i realise now from what u've said will make my pic much darker.

I see the spices used are Rajah , not knowing much about different manufacturers of Indian spices I use TRS  are these as good as Rajah?

Hi Gary, some would argue that Rahja are superior to most (although the tandoori masala mix powder has had a few comments, basically use carefully as its overpowering).  Others prefer East End.  There is certainly different views regarding garam masala, Rahja and Jalpur being the better ones.  I think in the main just try and purchase the freshest you can from a shop where the turnover is high.  Hope this helps
