Just seen this interesting Madras video on CBM's youtube site, anyone know what the brown paste is that he puts in?

The problem there is that the sound quality only improves after he has put it in (i.e., moves the camera awy from the pan!) but it sounds like he mentions 'extra spice' or something. Some sort of tarka? But that wouldn't go in at the beginning would it?

That narration says special spices prepared by the chef, I would suggest it's onion paste reduced with spice, CBM has a recipe His ebook.
I think you could prob find it on this forum if you searched.

I'll go along with bunjarra i think. I have made CBM's bunjarra before and it is lovely so I can see that it would compliment this dish
