Hi All
I knocked up a Chicken Madras for lunch yesterday, thought I'd share the cooking technique and recipe which I was first taught by a Bengali Chef over 35 years ago.
I was taught "The Knack" to a Madras and to a few other BIR dishes, was to burn the spices to get the flavour.
Which I would explain as more like "singe" and judging this just takes practice.
Once you've added the Chicken and the curry gravy, you maintain the high heat to fuse the spices (The Tarka) into the sauce.
If you don't do this, especially with chilli powder, the finished curry can taste different and sometimes taste powdery.

It's a follow up to my Madras Sauce Video (without the onion/capsicum mix)

Kashmiri Chilli powder is optional, but do try it, as it has a great flavour.
I use MDH brand, but if you can't get it, any chilli powder will do.

Ingredients
3 tbsps Vegetable Oil (Chef's Spoon)
1 tsp Ginger Garlic Paste
3 tbsps Tomato Dilute Paste (Chef's Spoon)
1 tsp Mixed Powder
1 tbsp of Kashmiri Chilli Powder
Squirt of Lemon Dressing
Dash of Worcestershire Sauce
Pinch of Sea Salt/Salt
Precooked Chicken Breast
Full Portion of Curry Base (300ml+)
Pinch of Fresh Coriander

Tomato Dilute Paste = 1 puree + 3 water
G&G paste 50/50 +salt+oil

Lovely jubbly indeed!! What a cracking idea by putting a large sieve over the pan. My mrs will be well pleased when I demonstrate that tip. To be honest the mess has put me off cranking up the heat so this will definitely help me out.

Thanks for posting Chewy. I'll give this one a go later tonight although it will be Abdul Mohed's base and ifindforu mix powder. I know what you mean about the chili powder not fusing sometimes so I'll pay attention more.

Hi Chewy,

Perfection my friend.  Pretty much identical on to my own technique and, using your base but my spice mix, I'm very close, infact, I'd be bold enough to say, I'm spot on.

Remember our chat with regards to that subtle hint of aniseed that I get from my local madras? well, 1 half of very small star anise, ground to a fine powder in my pestle and mortar, and added just before the base......it's there, identical clone....!

I haven't seen it locally and i have three asian shops that stock an extensive range of different brands of spices.  However, i know if i go to East Ham i can get this.

Always good to ask as most asian stores are very obliging.  I think MDH brand comes in  a box like deggi mirch whereas i have seen two or three brands of it in the normal type of packaging ;)

Most definitely not :o.  Try a taste test of the ordinary finger chilli, birds eye chilli and then a naga chilli and experience a little of the huge differences in taste and heat that exist in the simple term "chilli" ;D ;D

Seems like you've been all over the place, and in this weather too, that's dedication.
All the big Indian supermarkets around here stock MDH boxed products, even ASDA
started selling MDH, but haven't seen Kashmiri Mirch yet.

But any chilli powder will do mate, just don't use as much, unless you like it fiery.

As always - superb video and thank you for sharing, thanks to your original Madras sauce recipe that pretty much filled in all the gaps for me. This one should be the icing on the cake for those that missed the original.

Nice tip with the splatter guard - had seen those things before but had no idea what they were for and paid them no interest in the past!

@Ray

Have always thought some curry's had a hint on aniseed or fennel or something of that nature. Since 976bar posted his Bhuna recipe have been introducing a whole star anise during the initial cooking phase and then fishing it out. Will definitely try your suggestion of grinding half of one up!

brilliant recipe.
added a tbsp of methi, a tbsp of dried red chillis and a tiny wee bit of sugar.
made this for tonights dinner and had a sneaky spoonful or ten.
gonna let it sit for a couple of hours to let the flavours develop more and to let my tastebuds recover.
then I'm gonna demolish the lot with some rice and pittas

Now that makes me want to eat it right now at 9:45 in the morning :o.  Funny how the lighting can make one curry look like two different dishes :-\.  I always have this problem so i try to take my pics in the same place all the time to ensure as near as damit true colour of the dishes.  Is that a shop bought naan creeping onto the plate Mr M :o :o.  Shame on you >:( ;D ;D  Oops its a pitta - i re-read your post :)

made this yesterday with taz base, had no kashmiri so used hot chilli powder instead. it was GREAT! i would say the same as my favourite takaway. i have ordered some kashmiri chilli and will make again as soon as it arrives. THANKS SO MUCH!

Thanks for the recipe.  It was very nice indeed.  I had to make a couple of changes as I didn't have the listed ingredients. I used CA's base and I used regular chili powder instead of Kashmiri, and had to make my own ginger and garlic paste from fresh.  It did end up a tad gingery, but tasted very nice.  I also added a couple of chopped chilis to make up for the Kashmiri.  All in all a very nice dish.  My son rated as nearly the best he had eaten. (now ex uni student), which is a good first effort with the recipe.  I have to say it was different trying to follow a video while making it, but well done for the original post and video.  Thanks.  ;D

I made this again tonight, using Chewy's base. This recipe really does tick all the boxes for me. Thanks, Chewy. I used chicken tikka, and standard chilli powder as I don't have any Kashmiri Mirch.

I backed off on the chilli a bit because of this, but man, was it still hot! I think Chewy's technique in the video not only gives a rich, caramelised onion taste but also seems to make the chilli heat more of an instant hit in the mouth, just like I get from good TA curries.

I do use the reduction technique but I've had cold feet in the past when it comes to worrying about burning and ruining spices. As a result my hot curries have tended to be 'slow burning', with the heat building up as you eat them. But this was an instant hit on the lips and the tongue from the first mouthful, and I think it's the first time I've had that without using fresh chillies in the dish.

Anyhoo, here are some poor-quality pics, suffering from the Jekyll and Hyde colour contrast between the pan and the plate. I guess it would be better if I took them by daylight, but I like to eat late. 8)

Bubbling away in my beloved 20-year-old curry pan. Like a flat-bottomed wok, but made from ally and about 3mm thick. Holds the heat brilliantly and evenly. Was once non-stick, but most of that has come away as a result of using metal spoons (and probably ended up in my stomach). I'm sure my curries have improved since the pan's become more or less bare aluminium. I'll probably take some wet-and-dry to it to get rid of the rest of the Teflon.

The Madras was my best curry yet. I used your base which gives a good sweetness plus CA's mix powder + a little Balti garam masala. Lovely silky texture.

I found adding the puree to the oil first let me control the frying of the spices a bit more (and I'm cooking on Induction!)

Also coincide with the missus perfecting the timing of pilau rice and the best naans yet.

Your Base and Madras look spot on, your also spot on about singeing the chilli
creating the flavour and that's where the Kashmiri Chilli Powder comes into its own.
A really Intense chilli flavour
Certainly looks like a good supper and good result. ;)

I will be posting another old school recipe shortly,
Rezala used to be very popular back in the 80's
and is next on my list.

The missus just uses CA's pilau recipe, 3 mins on the heat/ 3 minutes covered off the heat, 45 mins in a low oven.
She says the secret is not heating the oil to  high when frying the spices (she's Turkish, so has a fair bit of spice coking experience, she always thinks I'm over heating stuff).

Also, she didn't understand one word of your video and didn't believe me that it was English ;D

Hahahaha, that actually made me laugh out loud.  Tell her not to worry Fried, I struggle to understand our Geordie cousins too,  ;D A good mate of mine comes from Sunderland and it's just impossible at times, especially when we go on holiday.  The locals are absolutely baffled by him.  He actually went working in Canada for a year but came back because nobody would talk to him, probably because they couldn't understand him ha

Just a simple domestic gas hob on high. Cooking BIR at home.

The singeing all happens between 1.00min - 2.00min
So you've got -
1. Hot Veg oil
3. Ginger Garlic paste.
3. Tomato Puree Dilute
4. Mixed Powder
5. Chilli Powder
6. A splash of lemon juice,
7. A dash of Worcestershire sauce
8 A pinch of salt.
All added in quick succession, singeing and sizzling as you create the Tarka. (Turn the sound up ;D)

Don't quite understand how your not grasping this my friend, as it's a good example of the technique.

Don't know how i missed this :o.  Probably because i didn't hang around the madras section much i suppose ::). 
After last Sunday, i don't think anybody can emphasis enough, again and again, how important it is to singe the spices.  Trouble is this doesn't come through when you watch a chef cooking a dish.  You just see a very high flame being used.  Unless someone tells you the purpose of it, it gets overlooked.  In all fairness CT, you did try and tell us but it kind of fell on deaf ears.  Start shouting it mate.  You must be feeling rather satisfied with yourself right now, and quite rightfully so ;)

No way could I leave the frying pan and mixture on max for 60 seconds without burning a hole in the bottom of the pan  :o will turn my hearing aid up mate and have another look at the vid  ;)

Made this again tonight.

Another success :)

My technique is a little different though: hot oil, then in with G&G (usually flambes here - whole pan goes up!) till starting to brown then Mix powder/chilli powder  till starting to brown, then in with dilute tom puree - then on with method as per video.

It's near definitive now for me, and close to becoming a 'off by heart' thing.

I mentioned on another thread that this has been my default Madras recipe for some time, and never fails to deliver. Follow Chewy's excellent instructions and you can't go wrong.

Here's the sauce I knocked up the other day, with the only slight tweak being the addition of extra chilli powder:

Thanks - but the star of the colour show is a 50-50 combo of Kashmiri and deggi mirch, which I find delivers good heat levels and great colour (in this case I used around a tablespoon of each, but each to their own taste).

I've made CT's excellent 3 hour base but i've yet to make the madras, not normally being my curry of choice.  Unfortunately for me, it does seem to be the "yardstick" everybody uses to measure the rate of success.  Maybe i'll do this one evening during the week with my Zaal base ::)

I should add that I only use this quantity of chilli when cooking for my own phal pulverised palate. When making it for my loved ones it's made to spec with the one tablespoon. (I know, I know - considerate and 'Mr Nice Guy' just doesn't begin to cut it... ;)

I don't know about others, but I find big (sometimes massive) variations in heat levels from different restaurants (as well as variations from the same restaurant). I've had Madras curries that wouldn't trouble a toddler and others that require a drip tray to catch your sweat and the laying in of extra supplies of post event Velvet Moist.

I suspect that on occasions a busy chef with four dishes on the burners may find his spoon picking up less/more chilli powder than is called for, hence the variation.

This was my tea tonight, wow what a dish, easy to make, or is my technique improving?

The first Madras I have ever attempted, been ages since I had a Madras from a TA so a comparison would be worthless, but as far as flavour went it was spot on, Chewys Video playing along beside the cooker is a huge help to keep me on track, although I did forget to chop the coriander, but that took very little time, always learning.  ::)

The colour in the photo is not showing a rich red, which it was to my eye, this is the colour I want to achieve and I am pleased to say I was very happy with it.  :D

Usually I tikka the chicken, but had no time this morning, surprisingly for me, I found I enjoyed it just as much!  :o

I think there may still be some yellow though, the table colour to the bottom right is more accurate.

I wish I had taken a shot of the pan, the colour against the ali was just what I am after  :)

This recipe is certainly in vogue at present with a number of members trying it and providing good reports, no doubt fuelling the interest of others & creating a virtuous circle. Maybe as part of this effect I was tempted to obtain a bottle of Lea & Perrins and have a go myself tonight. Well - what a success! I don't want too get carried away but it was by far the best curry I've ever cooked at home and well up there among the best I've tasted anywhere!  It really hit the spot.  ;D

I used a fresh batch of base sauce I cooked in the past 24hrs in the slow cooker. Started last night about 8pm and ran it overnight and all day today. I used chewy's sieving technique for the first time ever and the spiced water from the Zaal lessons. The end result when cooked as a madras was quite stunning and hopefully I'll get good results with other recipes using this base. However I think the credit for the success of tonight's dish lies with chewy's madras recipe - so glad I gave it a go!

this is a great recipe which i make and freeze. I just make the sauce though.
that way i can get all my curry cooking done in a couple of hours, then defrost when needed.
i swear it always tastes better when it comes out the freezer though

Chewy,have been reading this forum all day and have made the base!!

Question,well a silly one,on making your Madras,i heard you say it's for one person,so as i'm cooking for two,do i double all the Madras ingredients?

Common sense would tell me yes,but i don't want to balls this up,have tried many bases etc but still searching for the "one",upon reading this forum there seems to be no doubt that your base has hit everyones expectations.

Well, as my nic suggests i'm a bit more used to things on the hot side, although i am now beginning to appreciate flavours as well as heat
Madras is definitely not my choice of curry.  I decided that some 30 years ago after one try and immediately looked for something hotter.  As always, with age comes wisdom and i've learnt that there are many tasty dishes on the menu that are not dynamite hot but can be enjoyed simply for all the flavours they offer.
This is only the third madras recipe that i've cooked and eaten myself.  I've had this on the radar for quite a while given the excellent reviews by regular madras eaters.  I've got to say i've now put it on my savers list. 
I cooked it almost to spec, the only variations being that i used Abdul's enhanced gravy and the Zaal mix powder, and i added 4 chopped green chillis at the very end of the cooking process.  Everything else was as per your recipe.
Not being a madras expert this review is a bit subjective but i'm sure i'll be corrected by the madras heads if necessary.
The texture was superb.  A medium thick sauce laced with a little oil that comes through once cooked.  A lovely reddish brown colour resulting from the kashmiri mirch chilli powder.  A good savoury flavour with plenty of depth of flavour, a twang of lemon followed up by a good hit of chilli heat that lingers with slight tomato undertones throughout.  I am beginning now to understand why people use the madras as the yardstick for measuring home cooked BIR success.  I really do need to try a BIR madras vs this to compare but i feel that the delivery is going to fall short of this recipe.  For madras eaters this surely must be the dog's b******s ;D

Needed a Curry in a Hurry, made this 1 hour Pressure Cooker version.
Lightly spiced, producing a nice neutral flavoured base.
I've been experimenting with Branded powders, keeping it simple, for people just starting out. :)
What you need for this one
200ml vegetable oil, infused with Tej Patta and Cassia
500 ml of tap water
3kg Onions.
1 medium carrot,
Third medium Green capsicum .
Third medium Red capsicum
A quarter of white cabbage. (Small)
A handful of fresh coriander stalks.
Half bulb of Garlic.
2 inch piece of fresh ginger.
2 Green Chillis
3 tbsp of a tube of tomato puree. (M&S Italian)
1 tbsp of salt.
1 tbsp of Haldi. (Tumeric Powder)
1 tbsp of Bolst Hot Curry Powder.

If you just double the base, then unless you reduce it very heavily the resulting sauce will be watery and lacking in depth; if you /do/ reduce it heavily, then there may be insufficient sauce (i.e., the dish will appear unnaturally dry).  I would be inclined to increase all ingredients /pro rata/ with the exception of the hot spices such as the Kashmiri ground chillies which I would personally increase in the ratio 1.4:1 or 1.5:1 --  you can always make a curry hotter, but it is hellishly difficult to make one less hot unless you are willing to mix (e.g.,) yoghurt with it.

Hello people i started a thread a while back asking what was the best Madras recipe in their personal opinion and can't find it but this will do as it's the Recipe i was recommended and i have to say i was slightly sceptical to begin with as it seemed too simple but i was wrong it was DELICIOUS THANK YOU CHEWYTIKKA!!! i have Julians ebook and had his base in my freezer for months after falling out of love with cooking curry and decided to give this a go ,well all was going well till i added a teaspoon of mango chutney near the end of the finishing the curry out of habit and prior to this it tasted lovely, in fairness Julian recommended a half t spoon i think but i was a little tipsy and got all cheffy lol and it ruined it, so last night i followed the recipe to a tee but using the base gravy i had and Julians mix P and HALLEJUAH beautiful!!!! thanks again and was told it was the BEST curry I've cooked, my Missus reminded me 'less is more sometimes' and so true for this Curry, Thanks people

Yeah all those 3, the base also didn't give me results , obviously a regional thing but will be sticking to the 3.5KG Glasgow base from now on as I get great results with it

my take on a madras is that it should be hot in taste and flavoursome, you should get the flavour first then directly afterwards feel the burn, methi Is a key ingredient where I am from in Glasgow, just tasted wrong when I cooked it to spec, as I said its probably a regional thing

So I'm a 100% Newbie to BIR Cooking, never even heard of the term until Saturday when I was browsing YouTube for recipes.

Curries in America just don't cut it and I found this site searching Bengali Curries in the UK...What a find, I'm so happy that when I get it down I won't have to wait every 18 months to have a good curry.

I'd never heard of a curry base before, so made your 3 hr one last night.

I followed your Madras recipe as close as I could today trying to watch your video in real time.

The taste was fantastic but I buggered up the sauce as it reduced a lot.
My Mrs is a vegetarian so I took some of the sauce from my pan and transferred it to another to cook her paneer in.

As I said, the taste was really spot on and my American Mrs says that it was better than Indian food that she has had here (She loves Indian Food and eats it at least once a week).

So I just wanted to thank you for sharing your knowledge and experience.

The singeing all happens between 1.00min - 2.00min

Don't quite understand how your not grasping this my friend, as it's a good example of the technique.

I'm sorry I'm many months late noticing this 'singeing' debate.

My take is that emin-J grasps it, and CT does not. My opinion is that so-called 'singeing' is a complete myth. The video seems correct in following the practice used by many BIR chefs in following up the spices within a second or two with quite a bit of liquid from various sources. It must have the effect of cooling the spices with no chance of any singeing unless you let the pan dry out.

Not had a saucy curry for a while, I've been mainly chomping on tikka and bombay potatoes.

So, when discovering a portion of base in the freezer, I thought I'd knock up a quick CT's madras. As usual it came out great, even better than last time!

I left it alone a little longer than usual to get the nice caramelized bits around the edge of the pan, that combined with freshly chopped G and G and Kashmiri chilli powder made an amazing curry!

I had this for dinner this evening using Chewy's base and spice mix, I cut back the Kashmiri chilli power to 2 tsp and I have to say it was the best curry I've made to date, spicy and moreish. I had it with naan bread but next time I do some chips to go with it. Cheers Chewy absolutely delicious.

I will give you some feedback CT,  I may well be making some of your recipes tomorrow for my 12 guests and as your recipes have been highly recommended to me I will be trying some,  your basic curry come rogan josh that you yourself recommended looks definately worth a try for tomorrows less heat liking guests. Wont be trying DO or SS madras though as cant find a link to them  :)

It has taken a few attempts to get it right, the first time i burnt the spices and ended up with a bitter tasting curry then I over cooked the spices and ended up with a bland curry the last time I got it spot on and really enjoyed it.

Madras needs to be made hot pan. I think this is why some struggle with it.  Another hot pan dish is Bombay aloo, which coincidently is also a great chef tester.  As chewy says there is a knack to it.  It is interesting how dishes with fewer ingredients can be tricky to get right.  Many TAs in Birmingham are adding Naga pickle to their madras.  Trouble is the dish don't turn out like its supposed to. Bad practice imo.  Very poor.

Could I put the mix power and chilli power in with the tomato puree and add it all at once as a safe guard against burning the spices as they're usually add in quick succession.

My old (favourite) battered curry pan, pools the oil/tarka in the dent and works a treat for Madras and Vindaloo currys.

Also shows my original tip of using a lid to get maximum heat into the curry, without losing all the sauce through reduction.

I've just cooked two chicken madras and I put the mix power and chill power in the tomato dilute and then added it to the pan and gave it a good sizzle.  End result tasted just as good as adding them separately and less chance of burning the spices. If I ever let the missus cook a curry this is the method I'll tell her to use.

I'm new to this obsession and I'm not familiar with lemon dressing, could someone please enlighten me?  Homemade would be best if possible since I live in Denmark and the grocery offerings are basic to say the least.

It's lemon juice, my friend, but made from concentrate, with additives to enhance the flavour/colour. It's a favourite amongst some of our more pretentious members ;)

It's a less intense lemon juice flavour so you could just use half the amount of real lemon juice.

Of course if you want to make a real Madras you wouldn't use any lemon juice at all!  ;)

hi SS but from my experience all the restaurant kitchens I have been in, all use lemon dressing! having also cooked the madras in rajver and having posted the recipe and method on here. but then again I guess it is whatever floats your boat and where you are regionally! otherwise it is just a mild curry with extra chilli powder lol and no Worcester sauce insight!

That'll be me then  :).  Just looked at my bottle and had a swig and its just watered down lemon juice.

The madras from my TA still comes with a wedge of lemon in it. Chef's been there for 30 years.
