I had a tray of base sauce left in the freezer and really fancied a Chicken Vindaloo tonight. I had almost forgotten what a nice dish this is. I normally add a squirt of tomato ketchup to my vindaloo but I didn't have any so I added a few teaspoons of cider vinegar and a little jaggery instead. I also used 2 crushed kashmiri chillies, 2 finely chopped finger chillies, kashmiri mirch and deggi mirch for the heat in the curry. Lovely! Apparently the Passanda was ok too.

Vindaloo looks lovely, not had one for ages. I'm a vinegar and potato man, myself.
Made some base tonight so just need to decide on what curry :)

Thanks Gav Iscon! Same for me it's the first vindaloo I've made for about a year so it had to have potato in it tonight and I did like the tang from the vinegar.

Well I guess I'll have to join in the new base production fad for the new year as I'm all out and your 2 posts have ignited my desire to eat curry SR. Great looking curries indeed. My Father-in-law used to love Pork Vindaloo. His favourite curry dish and I prepared it specially for him several times over the years before he departed. I haven't made a vindaloo in ages so it might be time to do another. I also love potatoes and all the different vinegars, especially Malt. I think I have about 8 different types in my pantry.

Thanks for your comment Livo. I don't have that many types of vinegar in my cupboard but I have to say the apple cider vinegar worked a treat in this Vindaloo.
And there is nothing quite like the smell in the kitchen when a Vindaloo is being cooked!

Thanks CT! I'm using a Samsung Galaxy S6 edge, the light over the table is a daylight LED 100w equivalent bulb.

Just realised, theres NO massive oil slick in your curries.
That maybe a problem for some. ;D

I agree, phone shops are something I try to avoid. Guitar shops I avoid for different reasons, kid in a candy store unfortunately :D

The Sony Xperia ZX Premium has a very good display and cameras. Unfortunately I never bother to take full advantage of mucking about with lighting.
Specs: 4K display, 19MP camera and 13MP front camera.
SoberRat, a nice old Fender (or a really nice shiny new one) will set you back a bit more than a mobile phone. Natural ACV is a great health product. I used to make gallons of the stuff as my wife used to include in her horses' diet. At one point I was drinking a cup a day. Love the stuff. I still have a bucket full of Mother of Vinegar from a few years ago when I last did a batch.

The addition of vinegar gives it that distinctive taste for me and makes it much better than the hotter madras that some places try and pass off.
As for camera phones, I have a Galaxy S7 and I've had some great photos with it. i sometimes run the photos through Snapseed as depending on the lighting, i find that some of the earlier or coloured LED colour wash the pictures.
I'm due a new phone and waiting for the Huawei Pro 20 Mate to drop in price. The camera on it is fantastic.

Thanks Fried! I agree on the black pepper and I think I will use vinegar in the future. I normally add a squirt of ketchup which has a bit of sweetness so that is the only reason I added the jaggery, it was just under half a teaspoon, after a quick taste it just needed a bit of balancing.
I don't know how authentic the passada I cook is, I've never eaten a restaurant passanda! The recipe I used was very similar to this http://www.curry-recipes.co.uk/curry/index.php?topic=14371.0 but I didn't use any masala sauce.or ground cloves.

I used 2 tablespoons (measuring spoon) in the vindaloo and 1 tablespoon in the passanda. The vindaloo was very oily after I reduced the first ladle of base but it turned out just right for me. I do get the occasional oily curry but I tend to be conservative with the amount of oil that goes into my base and final curry.

It certainly will Livo ;D I know it too well haha! A neighbor of mine had a 1966 fender strat that wasn't in the best of health and she sold it for 15 grand!

Thanks Naga. Off topic I know but below are the two most recent, but not that recent, reasons why I avoid guitar shops! Last is a rather rare guitar that I've had for 30 years.

Thats a PRS and the last one is driving me nuts because I should know it..

Yes the PRS was one of those guitars I had to get. They stopped making that model with the solid Brazillian Rosewood neck after that so I'm glad I did but paying for it hurt!
The last guitar is a Washburn EC29. The 29 frets was one of those 1980's ideas for shredders everywhere! :D

The first one looks like a strat but I don't think it is
I'm not a guitarist but my mate collects them and now has about 50 and thats where most of what i know about them comes from lol

That is a lot of guitars ;D Mine is far smaller than that due to space/money hahaha. The guitar is actually based on a Strat by another fairly high end company, I'm sure your mate will know what a Levinson Blade is.

Very nice, Rob! I've reduced my guitar and amp stock to 5 as I only play for my own pleasure these days. I eventually replaced my Marshall AVT50 with a much more house (and neighbour!) friendly Vox Mini 5, I still play around with my Boss RC30 looper but these days its my Blacktop Tele and Epiphone PR5 electro-acoustic that see the most action.

Those Vox Mini 5 have a nice sound and if you're playing at home more the 50w Marshall is a bit loud ;) personally I just can't part with my gigging amp (Mesa Boogie Mk4) even though I don't gig much now.
