Title: Karahi Chicken Bhoona-Scottish Sunday Mail Recipe

Karahi Chicken Bhoona

Jiggy Majhus recipe (co-owner of Ashoka Group)

This is from her book..verbatim


INGREDIENTS

8 tbsp veg oil
1 tsp cumin seeds
1 large onion, finely chopped
1 large green pepper, sliced
1 heaped tbsp G/G paste
1 tsp salt
1 tsp red chilli powder
0.75 tsp turmeric powder
0.5 tsp curry powder
1 tsp tomato puree
1.5 fresh tomatoes, chopped
400g chicken breast, chopped into 2.5cm cubes
200ml warm water
pinch each of methi, fresh coriander and garam masala
1 fresh tomato, cut into wedges

METHOD

Heat the oil in a large pan (karahi)
Add the onion and cumin and fry gently until the onions are golden brown
Add the sliced pepper to the pan and cook until soft
Add the G/G paste, salt, red chilli powder, tomato puree and chopped tomatoes, stirring frequently
If you feel the mix is sticking to the pan, a touch of water can be added
Once the tomatoes have cooked down, add the chicken and stir into the mixture
Keep stirring for about 3 minutes
Add the warm water and stir
Reduce the heat until the chicken is cooked
Add the methi, coriander and garam masala
Stir and cook for a further 1-2 minutes
Stir in tomato wedges and serve

Cheers. Looking forward to trying this out.  Making base is a bit of a chore.  Already got a karahi dish; sorted!  Seriously though, I may have to cancel my pre-order.  Have the feeling Jiggy and the Ashoka are about to pull my trousers down.

Karahi...as in the medium it is cooked in...as in tandoori..cooked in a tandoor ;)

she may be a bit of a dingbat but is also a very successful businesswomen

Bhuna is a cooking technique, so as long as it's cooked bhuna style (which this recipe isn't) it could be cooked in your grandad's old tin piss-pot and it'd still be bhuna.  ;D

It shouldn't be in the BIR section though, you're right there.

"bhoona" is a style of cooking and also a recipe; "karahi" is a type of cooking container; where is the conflict ?

I made this when I got the pullout thing in the Sunday Mail weeks ago and it was delicious and that's what matters. I got the book last week and I've made the Bhuna again and also the Chicken Chasni which was also excellent. The book is gallus so it is.

Im sorry but I don't think it is correct. Is the recipe in the book flawed, or just your typing?

I made the recipe this evening and guessed that the curry powder and turmeric goes into the pan at the same time as the chilli powder, but the recipe in post #1 doesn't actually say.

The result was pleasant enough and would get 3 out of 5 stars from me. The sauce was rich, due presumably to all the chicken juices and fat from 400g fresh chicken. But I think it probably needs a lot more spices in order for curry flavours to rise above chicken flavours.

According to my book, this line:
Add the G/G paste, salt, red chilli powder, tomato puree and chopped tomatoes, stirring frequently
should also include the turmeric and curry powder as suggested a couple of posts above.
