Think it does make a difference and the colour and texture is totally different. Tried it for the first time recently and the smell and taste is much better. Was going to go out and buy a grinder to do the business but was pushed for time. So i tried  an old garlic grinder which i was  able to get the lid off and give a good clean to. Once the spices were roasted and had cooled a bit i emptied them into the grinder and ground up worked a treat.

Right Shite might be in bother then worked out it was in the fridge 6th day today. Usually really careful and throw meat out before sell by if doesnt seem right. Thought id read somewhere on here that someone mixed the oil from a base and final curry and used the following weekend on a fresh base. Its making me feel ill thinking about it :( hold on tight mucka

Just want to clarify the use of reclaimed oil. Ive reused oil which ive skimmed off bases that ive made before. If for instance i was making a chicken madras and skimmed some of the oil off of this when the curry was fully cooked would it still be ok to use this oil after it has been in the fridge for around a week. Was just wondering as chicken was also cooked in the madras. Might be a daft question but dont want to poison the missus AND ME ;)

Trying this base at the moment just cooling before blending. Must say smells and looks really good with a rich colour which mixed with the oil looks very appealing. Tasted also and tastes better than other bases ive tasted even though this is of no real importance. Made panpots bunjara earlier and that tastes bloody good too.

Anyway onto CAs think i will stick with his madras will try with the bunjara and without dont know if there will be a big difference?. I mentioned in a post sometime ago about the  bir around me when i have a madras and get more of a gravy?creamy texture which im not a big fan of. The only takeaway i do like which is spot on doesnt have this creamy/ gravy like taste and sees to be different to the rest. Anyone no the reason for this i live in the Chesterfield area and know the ta where me and the missus enjoy our meal from the owners travel down from the bradford area but the madras is h&s above the others ive had in this area.

Just made this used one cup of oil. There now seems to be to much oil Im going to blend to a paste. Should i remove some of the oil as looking at the pictures of others seems to runny. if i Do remove some of the oil would this be ok to reuse. cheers

BIR Main Dishes Chat / Re: My Madras Lesson

Fancied a curry tonight and as ive no base sauce left thought id give this one a try. ive tried various base sauces off this site started with darths which i thought made for a v good madras and the sns base bettered darths which i didnt think possible. Well having tried this tonight i feel it is on a par if not more tasty than the others ive tried. It might be that the base is fresh and not frozen. idont know im no expert but keep trying recipes/ideas on a regular basis and im more than happy with the taste and look of this curry. A question i have is it really worth the bother and effort of making a base when results are similar with a quick base method. Ive done the same with darths before when ive ran out of base and found the reslting curry was no different.

ive just made this base with the madras recipe provided. Ive only made darthpalls base which i thought was great. I then did the sns/saffron base which was also good probably better for me than the darth one which i never thought id say. Anyway had a go with this one today but just added a couple of carrots. The base, unlike others, tasted nice enough to eat when finished. The extra garlic i think gives it more of the taste i look for. The finished curry was cracking really nice and the whole process i found was easier and more straightforward than the previous bases etc i have attempted

Curry Base Chat / Re: Experienced members base sauce of choice

Cheers Jerry glad you knew what i was on about with the TA could it be tomato soup has ive looked at bases with soup, tomatoe ketchup etc. But i must say i thought darths would take some beating for my own taste buds but the sns base was absolutely cock on.Im glad i made the base as i was just going to stick with darths because it was still very good. But the sns base had the colour, smell and great taste.I still got a bit of the creamy/gravy taste but the end result was comparable if not better and more subtle than the ta.Delighted

Ive tried three base sauces with Darths being the first one. After struggling to make anything that resembled BIR i must say this was the best id ever made even the missus thought it was great and i didnt get the feeling she was just being polite. Ive made a rushed  curry since when out of base sauce and used celery, carrotts and onion with madras recipes and found the results very good. The 2nd base i made was ifindforu. Must say was very dissapointed with this one. Missus only ate a mouthful before turning her nose up and i must admit i wasnt keen either and i can usually eat anything that resembles a curry but still it could have been something i had done wrong but cant pick up on anything. Just made the sns base and the colour and smell are fantastic going to knock a madras together tonight and v optimistic. Also my preferred dish is madras. Where i live ive tried around 7 takeaways and only one stands out as being my preferred choice- not that the others dont taste good. Its just the others do taste more like a gravy theres a taste that you get in them all - its almost a creaminess- as though this is the norm but the one i like is not like the majority and doesnt have the taste of the others any idea what this might be
