Two more possibilitites:

1.  After cooking, you left the meat to cool. There was still a lot of heat retained inside the meat for an hour or two, and this additional "slow cook" made for more tender meat.

2. The marinade contains some elements that helped tenderise the meat.

For me, number one is most likely :)

Great video, thanks for sharing. Haven't been so hooked since I spent 40 mins watching some guy woodworking with chisels.  :)

@ Phil, I also liked it that he used proper safety gear. Probably the reason he has reached retirement in such good health :)

My problem is that only 3 seeds germinate in a pot and I get long strangly growth which just collapses on to the edge of the pot  :(
