garlic and coriander naan
« on: February 02, 2015, 05:45 PM »
Hi guys, does any one have a good recipe for just the garlic and coriander topping ? I've tried lurpack butter melted with garlic powder and wasn't too pleased with the results. What would you suggest for the real deal ? Thanks. Using the happy naan recipe which is really good by the way.

No BIR would use garlic powder, not when they have heads and heads of fresh garlic to hand. Just grab some cloves of garlic, put them through a crusher and add to butter with fresh chopped coriander and salt.

Finely chop a couple of garlic cloves , sprinkle them and some fresh chopped coriander over the rolled out naan and press in.  Cook the naan and brush with melted butter ghee or your lurpak  ;)

Thanks a lot, I had it in my mind garlic powder was used. Crushed or chopped, will try both. Thanks again. Using Abdul's peshwari mix too which is OK. What peshwari mix do others use ?

I can't speak for 'all' BIR's, Davey, but I can say that if you are using the H4ppy Chris naan recipe for homemade, restaurant-style naans, I would avoid putting anything on top of or inside the naan before cooking.

Any weight on top will prevent the naan rising properly; similarly stuff rolled into the dough won't allow the dough to cook the same and will be a bit flat.

Do it like BIR's do and make the naan then spread some garlic/butter ghee on top. If you like, put it in the oven, briefly. :)

One way of doing it.
Pretty much as Chewy described.

I don't think Davey is using a tandoor, Mick :)

Yes, maybe so.
I thought the question related to the topping/filling and how it was applied.
My apologies if I got that wrong.  :)
