Additional Ashoka Recipes
« on: November 07, 2009, 11:54 AM »
Guys I have a dark secret to share, ON my last visit to The Ashoka the Chef actually gave me a copy of the Chefs Handbook. Yes the insiders guide to all the recipes, they are in real time quantities and I have them all. He did however ask me to never share it full but said I could share a few. So below I will outline two further "Essential Base Sauces" and a couple of recipes.

Nah I think this is real. Prepping the kitchen is fundamental and done before opening times. I see no reason why you wouldn't have various pastes on hand for different dishes. I've seen cream in Rogan Josh too. There are many recipes that call for it and the actual recipe is just about global and not BIR.

Nice one PP. Jealous now of course since I'm search. Oh well, onwards and upwards.  ;D

Guys, I got pissed off the last time I posted stuff from The Ashoka when folks were questioning what I had reported. I've said repeatedly that there are substantial regional variations and these recipes I am giving you are right out of the handbook used in the kitchens in Glasgow. They may not be what you are used to but they are used as bases for recipes as you will see below. I have had to split the post due to the weird thing that seems to be happening when I type deep into the typing panel then loose sight of what I am typing so have done it as Parts. I will just keep posting on this thread now until its done.
