First Dinner Party Booking - 15 People

Following my grandson's 1st Birthday Party the other week, someone was so impressed with the Indian dishes I had cooked that he has asked me to cater for his wife's 40th Birthday Party this Saturday :)

I've now got to go and buy and prepare the following

Poppadoms & Various Chutneys
30 Onion Bhajis & Yogurt Mint Sauce
15 starter portions of sizzler Chicken Tikka with Salad and Yogurt Mint Sauce

4 Chicken Kormas
4 Chicken Tikka Masala's
4 Lamb Madra's
4 Garlic Chili Chicken's
4 Lamb Bhuna's

15 portions of Aloo Gobi

10 portions of Pilao Rice
5 portions of Plain Rice

15 Naan Breads

Once again another great big thank you to this forum, as without you guys I would never have been able to do this :)

Good luck for the day! - I am sure you will do a great job, knowing the quality of your chicken tikka and garlic chilli chicken from the CR0 BBQ.

Must admit though, that sure is a lot of food to prepare....

Many thanks and changing the subject slightly, is there another BBQ this year? I remember seeing something about it earlier in the year but not heard anything since....

Only catering for 15 people, Bob ?  You'll need to scale up for the Olympics :)
** Phil (who cannot conceive of catering for more than four at the absolute max).

I'm impressed mate!!  I'm sure you're be fine.I was asked myself recently to do the same sort of thing for someone,I'll be interested to see how you get on and any advice/tips you get out of it.Out of interest do you have a specific naan bread recipe you use,it's still one thing I haven't been able to master even though I have my tandoori oven.cheers jb

I have started. I went shopping this morning for some more fresh spices and have a batch of Taz's base on the go.

I plan to go and get a leg of Halal Mutton tomorrow along with 5kg chicken breast.

Wednesday I plan to marinate the chicken tikka which I like to marinade for 48 hours, and stick the leg of mutton in the fridge.

Thursday I am in London all day, so Friday I will make all the sauces, BBQ the chicken tikka and bake the pre-made chicken, slow cook the mutton for around 3 hours and make the rice.

Then Saturday, just make the onion bhajis all the dips/chutneys, add the meat to the sauces ready for heating up.

I will buy the naan breads as firstly I have not got around to making them yet and don't want to spoil the party and secondly I don't think I would have time to make them anyways. Iceland are doing a pack of 3 for a ridiculously cheap price at the moment :)
