Post by: Yousef on August 21, 2006, 07:00 AM
I saw this in a mag and have to say its pretty good.
I am not sure where this fits in, its more authentic so posting in here...

Ingredients:
4 Tbsp vegetable oil
2 tsp cumin seeds
3 medium onions, chopped
2 Tbsp finely grated ginger
4 cloves garlic, crushed
1 tsp ground turmeric
1 tsp chilli powder
400g can crushed tomatoes
? cup water
750g large raw prawns, heads off, peeled and deveined
? tsp salt
pinch of sugar
1 tsp coarsely crushed black pepper
2 tsp crushed coriander seeds
2 tsp ground fennel seeds
1 tsp dried red chilli flakes
3 Tbsp chopped coriander, for garnishing

Method:
Heat oil in a frying pan over a medium heat and add cumin seeds. Once they are fragrant and change colour slightly, add onions and cook gently for 15 minutes, until softened and lightly browned. Stir through ginger and garlic and fry for 1 minute. Add turmeric and chilli powder, fry for a minute, then add tomatoes and water.

Lower the heat and cook the sauce for 10 minutes, stirring off and on until pulpy. Add the prawns, season with salt and sugar, and cook gently for about 10 minutes, or until cooked through. Add a little more water if the sauce is very thick.

Stir through the crushed black pepper, coriander seeds and fennel (grind these in a small spice grinder) and the chilli flakes. Garnish with chopped coriander
