Finally after many years of attempts/recipes/failed eureka moments and 2 home build tandoori ovens later i now feel i can truly replicate restaurant style naan breads at home, i feel Ive got it nailed down, no longer need to tweak my recipe and ultimately the method and this is without a tandoori oven.
I can make the naans pictured every time no more floppy, stodgy, [sometimes biscuit like!] sour, funny cant put my name on it after taste. Real Deal Naan bread.
I really didn't think it would of been so hard! but the variations are vast!! from yeast to no yeast, self raising, plain flours, a mix of both, yogurt or not, with little or a lot of baking soda not mention pizza stones, granite plates and blow torches all of which have there merits! if could install a gas fired tandoori oven in my kitchen i would of done years ago but it not going to happen no matter how much i beg the misses!!
This is done with CBM's method of Tava and a 9kw gas ring, inverting the bread into the flames,
I do have to Thank CBM for his method here as it was a big upward step for me.
I'm sure this can be done a gas hob with wok ring or perhaps the large ring not sure as i have electric hob[bad idea but its easy to clean :'(]
I will post the recipe but i really want to weigh and measure the amounts again.

Congrats on your success UB!
UB we have all chatted about naan recipes and different ways of cooking them but it would be great if you posted your recipe as I would like to try and perfect this. My naans are good BUT can I take them further and be as delighted as you clearer are with your lovely looking naans. You recipe might lead me that way!!!!

hi uf mate i had a very similar moment to yours then out of the mist the confusion walked a man i can only describe as a nan making genius the great man him self happy chris total no messin fool proof way of making perfect nans and chappits the thread is on the sight somewhere sorry i havent copy and pasted it for you to have a look at but plz do search it out as a fantastic vid to show you how to do it happy currying mate ( Ivan )

I'm on it, I'm making naans again over the weekend to double check my measurements, dont want to post a incorrect recipe, Ive done that twice before !!

along with us all i'm really intrigued how it can get any better. UB's original pointer of using a high hydration (66%) was a massive step forward for me.
leaving the mix for at least 1 hr or even 24hr and chucking out the baking powder being the others. CBM's inverted pan is still on my to do but can see it working a treat.
any additional info from UB is certainly going to ice the cake.

The 24 hour thing is right. Keep it cool and let it "marinate". And there is no need for baking powder as long as you have yogurt in there.... trust me. 8)

OK, the recipe is confirmed, weighed, measured, check and rechecked - i can repeat it everytime, which is more then useful!!

spooky this - i too can't shake off being over busy too - want to get onto wfo but even that is out of question at mo.
anyhow real reason for post of course is that pic - tantalising. given i intend modding wfo this year i will certainly aim to include anything that results from your efforts.

it's a yes and and no on the wood fire oven. i have a barrel oven and need to try out fire brick hearth before doing further on it. i also have what's called a black oven that i call dog hutch which i intend to mod - the fire is too close to the hearth which sits above the fire.
i really need to build one of those round ovens "pompeii" but the effort and size puts me off.
i have looked at trying to build in "tandoori" add on but not got anywhere. a "naan" facility if possible would be of interest - particularly if the warm up was quick. warm up being my no 1 downside to wfo - it takes too long in comparison to electric.

i like the tittle pizza on the top.
i've all my fingers crossed for this prototype.
(i've modded my wfo and still trying it out - even if i get it how i want the warm up of ~ 2hrs remains a bug bear. this kind of encast arrangement shows real promise even with say a tikka stand built in and importantly for me could just about squeeze it in my garage for all year cooking).

many thanks for pic. was concerned how the "stone bake" base would be achieved but can now see cooked on steel - which many are switching to.

Interesting oven - hybrid by the look of it with a gas ring at the bottom and an electric heating element at the top. Your photos beat my post about the scarcity of information by about 30 secs, so I've now deleted my previous post. Pizzas are all very well but what about naans, as per your own title for this long-running thread?

I defy anybody to tell the difference between that and a BIR naan, based solely on looks :o :o It's got TA written all over it. And since it's the texture and finished appearance we mostly have a problem with, rather than the taste, I bet that went down a real treat :P The little fellow is behaving exactly as he would if on the wall of a tandoor ;D

I agree, as far as a profile view is concerned. It would be good to see a picture of a naan cooked in that oven, on a plate (the finished item) where you might see a lot more of it.

Personally I only object to that sort of thing when it seems fairly obvious that the post is designed to elicit traffic to a particular website rather than impart any useful information. UB's post above fits that category IMHO.

Would it not be far better to post the recipe and all photos/details here ? Others have succeeded (indeed, no-one else has reported such problems), so they clearly cannot be insoluble. Many of us have no wish to register on other fora simply to gain access to material that could (and, some would argue, should) be posted here.
