Title: Lassi... anyone?

Hey guys!

Just wondered why there are almost no lassi recipes on this site. Want to share one of my favourites with you and maybe some of you could post their recipes as well. There you go:

Kela Lassi (Banana Lassi)

2 ripe bananas, chopped
240ml yoghurt
120ml chilled water
2-3 tablespoons lemon juice
2-3 tablespoons honey (or white sugar, jaggery, etc.)
1/4 teaspoon cardamom powder
1-2 teaspoon(s) rose water (or kewra water)
a pinch of grated nutmeg (approx. 1/8 teaspoon)
6-8 ice cubes

Combine the chopped bananas, yoghurt, water, lemon juice and your sweetener in a blender. Process for 1-2 minutes until smooth. Now add the cardamom, nutmeg, rose water and the ice cubes and process for another minute. The ice cubes should be partially, but not fully crushed. Bananas will give you a natural sweetness, and slightly thick lassi. Serve and enjoy!

I use a recipe for mango lassi but, as yours is based on cheap bananas (compared to expensive mango), I'll give it a go.

Hey George!

Love a good mango lassi, too! Peaches are one of my favourites also. Do you only use yoghurt in your recipe, or do you add cream and/or milk?

Instead of plain water, white grape, apple or pineapple juice can be used, too. Please let me know how your lassi turned out. 

Would be interested if anyone tried already some lassi made with buttermilk? Or any fans of the real, traditional, salty versions around? Personally, I'm more into the sweet lassis, but tried only one ginger-cumin flavoured lassi yet.

For me, mango lassi every time.  Made some only two days ago and will be making more today.  Ice cubes, TRS Kesar mango puree, Lidl Greek yoghurt, Rubicon mango juice.  All in the goblet blender, blend till smooth and serve.  It sounds so good that I think I will have to go and make some more now rather than morning coffee !

I'll need to try this banana lassi and see how it is. Sounds interesting. I don't know where to get rose water, though.

Hey StoneCut!

You could substitute the rose or kewra water with some vanilla extract or essence, or use some vanilla sugar as sweetener. You'll get rose water at any good asian grocery store, or (at least here in Germany) at the pharmacy, too.

Hi George, we use mango pulp in tins to make our lassi. Cheaper and easier than fresh mangoes.

Hi Guys,

This is the recipe I use for mango lassi:

4 ice cubes (crushed)
1/2 cup mango pulp (kesar)
3/4 cup plain natural yogurt
1/4 cup milk
2 tsp sugar
1/4 tsp ground cardamon (optional)

combine and Mix in blender for 20-30 secs. Add cardamon on top after pouring in glass. (Easy as that)

Note for a thicker or thinner consistency just adjust ice.

The last couple of days I've experimented a little and tried a few new lassi recipes. Strangely, I had some negative experience with some canned mango, which I pureed and processed to a mango lassi. The drink was "hairy", little pieces of fibre everywhere. Never happened before, and even tasted the pure puree before I blended the buttermilk in, which seemed absolutely fine at that moment. Really, it felt like you would drink a broom ;P

Nonetheless, want to share another lassi recipe with you (: This will serve one or two, depending on the size of the serving glasses:

Meethi Lassi (Sweet Lassi)

3/4 cup yoghurt
1/4 cup chilled water
1 1/2 teaspoons lemon juice
1 1/2-2 tablespoons honey (I really prefer honey over other sweeteners, and would recommend using it as a sweetening agent in all lassis, but you could also use sugar, jaggery etc.)
1/8 teaspoon cardamom powder
1 1/2 teaspoons ground almonds
a few ice cubes (3-5 small ones)

Combine the yoghurt, water, lemon juice and honey in a blender. Process for approx. 30 seconds (up to one minute). Add the cardamom, almonds and the ice cubes. Process till the ice cubes are partially crushed and the drink is frothy. Serve and enjoy!

I love Mango Lassi.I have made it 2 times and i have added some low fate cream in this recipe.  :)

I make mango lassi all the time, but my recipe is very much simpler than Chonk's :

For a 1,2L jug blender --

Forgot to mention that the original recipe for the Banana Lassi called for 120ml white grape juice to be used alternatively for the water, if you like. It's really good. But here's my alltime-favourite, honeyed peach lassi, originally published in "Lord Krishna's Cuisine" too. Probably the most sophisticated lassi recipes I've seen and tasted so far. So have to share them!

2 ripe peaches or nectarines, peeled, pitted and also chopped - but I actually used the canned peach halves
1 pear, also peeled, cored and chopped
1 tablespoon lime juice
4 tablespoons clear honey or sugar
6-8 ice cubes, cracked
240ml coconut milk or apple juice (I prefer coconut milk)
240ml yogurt or buttermilk
pomegranate seeds for garnish (I skipped them)

Combine peaches, pear, lime juice and honey and blend until smooth, then add the ice cubes and pulse a few times. Then add milk/juice, yogurt/buttermilk and process for 1 1/2 minutes or until frothy. Garnish and serve.
