Title: Layne's Chicken Tikka.

Hi Everyone
This is my Chicken Tikka as you can see I have used red onions green + yellow Peppers and I must say I have eaten Tikka from various Indian establishments in the last 30 years but NOT 1 tasted as nice as this only because of the addition of peppers  + onions.

I marinated the Chicken for 24 hours then started them off in the oven on a gas 9 (highest)
I placed Tikka on the toast rack in a oven tray so the Tikka is not sitting in it's own juices and causing a basting/boiling effect it must be kept out of it's own juices so it's in fact roasting in a very high heat similar to Tandoors.

I Probed Tikka until the temp got to 67degrees (should be 70 or over) but the frying will establish the proper cooked temp.
I removed from oven then placed in the Very Very hot pre-oiled griddle pan with the onions and peppers for a further 5 mins my cooker fan was on full and kitchen window was open you could smell it down the street :P
With the addition of some lager it was absolutely gorgeous :o
I kept the left over marinade in a airtight plastic container to be used again it will keep for at least a week in fridge.

Which recipes did you use for the tikkas and raitha?

Is that one beer each?........or are they both for you?  :P

Excellent Layne.  Looks like you got the texture and moisture right. 

Not keen on Stella, but Amstel goes very well with curries as it has a slightly sweeter taste.

This is yet another of those great recipes on the site that is a must try...adding the best to the repertoire is becoming more and more difficult because the taste for all of the recipes is so incredible . Who's recipe reigns supreme ? - Who has the ultimate taste ? - a most pleasant quest .  :)

Looks like it time for the old Jedi mind trick.
 "Let Darth buy all the Spices he's looking for, then make passionate love to him for 6 hours & then turn into a cool Beer (have i missed anything ?) ;D :D

I have to agree with you believe me my friend I have tried all combinations for gettin this recipe right and you are currently eating the Best Tikka recipe on this forum at the moment Oh yes.
But hey who knows someone may come up with a better recipe in the future lets hope so eh  :D

Were there any food colouring used in the tikka seen in those pictures?
I don't use food colouring and my tikka never turn out that red.

Edit: Actually I figured this out myself. It turns out that the Patak's Tandoori Paste sold here in Sweden doesn't have any red colouring in it. It's a very brown colour. Today I happened upon an imported can of Tandoori Paste and it had the exact same ingredients as the Swedish can with 3 extra food colourings at the end. I'm guessing that's the difference. The imported can was a vidid red colour.

Yes the Tikka has a spot of red colouring in it but you can easily leave it out it most definitely won't effect the taste it's just a visual additive OK.
