How good are your eyes? When you are shown something do you see it? Well lets see.
In this video the chef does something when making the naan, he does this for a reason!
1. what is it that he does?
2. why is he doing it?
It has nothing to do with adding something.

Folds it into a pocket and seals the corners, so that air is trapped inside which will puff it out when heated.

he presses the edge over his wrist so it doesnt fall as hes sticking it to the wall.
or he makes dimples again around the edges after hes rolled it out to make it easier to peel or not to get huge bubbles.

I'm going to draw your post to the attention of Admin in case he hasn't already seen it. I'm sure this won't bother you but my opinion is that it's out of order to be calling me a liar or apparently supporting the use of four letter words and other unacceptable language on this forum. Moreover, you are wrong about my terms of reference. Over a year ago, I agreed with Admin that I'd moderate out words, like I have been doing or personal insults of the worst kind. If I controlled this forum, I'd have a three strikes and you're out type rule. You'd just have notched up your first point. Garp would have notched up his first point. Try using words like that in any area of civilized society. It's totally unacceptable.

Well if it has nothing to do with adding something maybee it's something the chef takes away?? As with other tandoori chefs he make a point of flipping the naan bread between his hands to shake the excess flour from the bread,I believe it stop the thing from burning.

Is it the pushing down with his fingers. Is this to control the rise of the bread
so it does not go like a big rugby ball when the steam is created inside.
Other than this I have no idea.

OK - this is a long shot but I'm willing to risk it for the prize.
Has he recently undergone a series of breast-reduction operations?

He uses a very hot, full sized restaurant specification tandoor oven, powered either by charcoal or gas.
He does it because no other cooking method is as good.

Whilst initial kneading, he, in a split second crimps the dough with a few fingers before folding the dough in on itself, to add a few more little air pockets, to help ensure the naan is soft inside when cooking.

He uses his fingertips to create pockets of air in the underside of the dough, so when he rolls it out it captures these and puffs them out when cooking.

The only thing I can see is that he adds oil on one side - the side not attached to the tandoor - to help crisp it up? - or have I had one too many Stellas?

I reckon he puts a Peshwari filling inside the dough and cups it up and around so that it evenly distributes the filling when he is rolling it out.

Actually I always found peshwari naan breads particularly difficult to master.In just about every video I've seen the filling is put in the middle of the dough in a big round ball and the edges are lifted up and the thing is rolled out.However I always found mine tended to split and the contents split out doing it this way.It's only since using this method ie spreading the content evenly and thinly over the surface that my peshwari naan's have been a success.Maybee that's the answer?? Still think it's something to do with the chef shaking the flour off though...

Leaves the dough thick before he puts the filling in and folds the corners in to ensure it spreads evenly throughout the nan.

It looks to me that at one point after he has created a slight teardrop shape he presses down firmly on the bottom narrow end of the uncooked nan to lightly stick it to the workbench so that while he coats it in oil/water? it will retain that shape. By pressing on it to lightly stick it to the table he ensures that it will not shrink back into a round shape.
I have made enough bread and pastry to recognise this technique.
If your book delivers the goods I will still pay you for it.

As he folds the dough he pokes the dough down in the middle with his right finger to form a pocket for air :-\

He gets the naan in the palms of his hands and pats it from one hand to the other in order to get all the loose flour off it which is essential for perfectly authentic BIR naans

In comparison to my local naan bakery, the chef flattens out the dough then spreads the filling evenly before cupping. (Mine just sticks his thumb in then drops in the filling). But also this chef wets the face to slow the cooking but doesn't wet the back. Witch mine does.

After putting in the filling, he folds the edges of the Naan up similar to creating a pizza ball which will trap some air inside to create bubbles.
He then slaps the Naan between his hands to 1) get rid of excess flour and 2) pre-stretch it a little.
Finally he makes sure not go over the edge of the Naan when rolling it out in order to leave some air trapped inside, too.

Just made some nans, didnt use my fingertips to push down on the dough on the first one and it pufed up like a rugby ball,used my finger tips on the others to to push the dough together and they bubbled up fine so im going with that

again on one of the Sunday morning cooking
shows, it's just a guess really.
It could be anything.

I've watched a chef recently making naans with no rolling and no table. Stood up, just using his hands, no prodding, no water, then just slapped on the side of the tandoor. Perfect, every time. How does that work?

Let us hope that it does not. No matter how any of us may feel about Chris and the much-vaunted e-book, his videos have received ever-increasing acclaim, and if in future those were solely to be announced on another forum, I think that many here would feel that the baby had been thrown out with the bath water. Yes, he posts stupid and provocative messages when he's had a skinful, but if we're honest, others have been known to post stupid and provocative messages without even that excuse, and as far as I know, none have ever had the ultimate sanction used against them.

We cannot dispute that Chris posted very informative videos. However, this cannot excuse his ranting and goading. This was made worse by other forum members reacting to his behaviour. Obviously, Admin decided enough was enough, if my interpretation is correct. Such a pity that the same approach was not adopted with owner of the new rival site, who most definitely deserved it, but never got it. Sorry to say it but, no disrespect to George meant, had better moderation existed, as has been written numerous times, this whole sad situation, may have been avoided and CR0 would have not lost a good source of inside info :(

Nothing to do with his book and videos, IMO he should have been banned immediately for the completely out of order picture he posted in the now deleted thread.
I imagine he was on a last warning and his last thread was the proverbial straw.

I know what you mean but, as you know, my present terms of reference do not extend to locking or deleting whole threads. The furthest I can currently go, by agreement with Admin, is to change certain words to read 'moderated' instead. And even going that far, gets some members' backs up. They claim I'm lying. I still believe it cause more problems than it solves when there is greater moderation, by anybody. Self restraint and self control by everyone is far superior, in my opinion, The number of issues like h4c or CA is so rare, that Admin can, and does, deal with them. It would get too subjective and cause too much trouble if me or anybody started implementing 'better' moderation. Yes, I take 'better' as meaning 'greater' or more moderation, in this context.

At least that way you know what it has been moderated for, which I think is helpful. But, of course, one man's filth is another man's comedy and, as George seems to have a puritanical leaning, for me he over-moderates a tad in that respect.

The problem is that thinly veiled words like yours above would need to be listed and there must be millions of possibilities. Now, I tend to edit out those as well, and perhaps that's why SS thinks I probably go too far. He might be right but surely it would get much worse if there was a 'get tough' policy of greater moderation.

In my opinion the thinly veiled words are the better of 2 evils. You would never, as you rightly say, stop them but at least you're half way there and it makes your 'damned if you do, damned if you don't' moderators job a lot easier. If we followed the Terms and Conditions properly, of which there's only been 80 odd views out of 20K+ members :-\, things would be a lot more straight forward especially when threads resort to personal insults.

Anybody wanting to still view Chris' videos can access them by typing "h4ppy leader" into youtube, select his profile and then by selecting videos. If he posts any new ones on another forum, they should still show up there.

Calling me a liar and untrustworthy is almost verging on the sort of personal insult which should be moderated out. Why? Not least because calling anyone a liar is banned in the UK House of Commons, amongst other places. You may not know that as you live in Australia. I've never lied about what I'm doing. It's you and at least one other member who persist in mis-representing and/or distorting my role. I sometimes wish that, when I delete masses of spam there was an option to leave it there for certain members like you. I'm now firmly of the opinion that you are a troll and, possibly, skating on thin ice. I'm trying to carry out a minimalist moderation role and you won't accept it.
My role, as agreed with admin a couple of years ago, is to delete spam as well as four letter words, thinly veiled equivalents and the worst kind of personal insults. Do you acknowledge that? I've never done more.

It was plainly obvious he was going to start something to get banned, as I did goad him several times about his supposed E-Book, my take on it is there was never going to be an E-Book, I am a member of CA's website also, so I suspect Happy wont publish a book there and when it becomes too much for him he will either get banned from there or leave also
