Title: Takeaway Mango Chutney - Made Fresh or not?

Hi All,

Could anyone tell me if the Mango Chutney you get in a Takeaway or Restaurant is made fresh by the chef or if it is bought in please?

I notice that the Mango Chutney you can buy in the supermarkets is chunky and spicy, whereas the ones you get in the BIR are bright orange, sweet and more like a sauce.

It has always baffled me.

Normally bought in, in my experience.

Some of my locals use 30/40 kilo drums of KTC or Balah brands, depending on their business.

Commonly Pataks 2.2L catering size are used.

Food colouring is used to change its look in some places.

I'm into Geetas Premium at the moment, good blend and full of Kalonji seeds.

Yep I like the Geeta's one too and like the different seeds in it which give a nice texture.
I had homemade mango chutney once in a cafe smeared on a toasted chicken ciabatta and it was lovely. So nice infact that I've been meaning to make some myself for ages. - I wish I'd asked the owner for her recipe! :(
If you are at all interested in going down that root, go to an asian greengrocer and ask for some nice ripe, yellow Pakistani mangoes (rather than the green and red supermarket type ones.) They taste absolutely gorgeous!

Two of the kitchens I visited, add water to mango chutney and blend it.
I have never had mango chutney as thick as the stuff I buy, so I assume the above is a common practice.

That's right I think some places use it to sweeten the raita as opposed to sugar and for making that sweet red onion gooey stuff they give you with poppadoms! I think the smoother version must lend itself better for those purposes. It's also probably a cost thing too.

Geetas Premium Mango Chutney is the best I have ever had by a mile but it's not what a BIR would serve.
