Title: Almond powder
Post by: Edwin Catflap on May 25, 2014, 12:57 PM
Hi

When I do a CTM I use maggi coconut powder and some almond powder, but i force the almond powder through a sieve cos i dont like the texture. Is there any fine almond powder out there as it seems that almond was the main ingredient rather than coconut and I'd like to try the old way.

When I made Chewy's CTM last week, I mistakenly bought ground almonds instead of Almond Powder. I just chucked it in the spice grinder in batches and ground it down finer. You have to keep giving it a prod about though as it starts to stick together.  :)

Mixing it is hard - cos of the oil content in the nut - just persevere - or dry roast quickly not to browning stage then grind (even if already ground but too large)
