Post by: Madrasandy on December 13, 2014, 12:25 PM
Latest recipe I have been working on , beautiful and very hot

 1 Star Anise
1 Onion halved then finely sliced
1 Green  Pepper chopped to bite size pieces
 2 Tsp Garlic/Ginger
 2 Cloves Garlic finely sliced
1 Superhot Chilli finely sliced (I used Brainstrain, but if you don't want as hot use Scotch Bonnet)
 1 Tsp Methi
1 Tsp Mix Powder (Abduls 8 spice (http://www.curry-recipes.co.uk/curry/index.php/topic,6176.msg61643.html#msg61643))
1 Tsp Naga Masala powder (From here (http://chilliesontheweb.co.uk/herbs-spices-and-seasonings/naga-masala-seasoning))
1/2 Tsp Bhut Jolokia Chilli Powder (or use 1 Tsp extra hot chilli powder)
 2 Tsp Kashmiri Chilli Powder
1 Tbsp Tom puree mixed with 2Tbsp water
2 Fresh tomatoes cut into 1/4
 1/4-1/2 Tsp salt
 Juice of half Lime
 Fresh Coriander, stalks and leaves
 350ml Base gravy

Bring base to boil then turn down to lowest heat and add chicken , leave in for 10 minutes the remove

Heat oil and gently fry star anise and onion until softened, remove star anise
 Add garlic/ginger
Add fresh garlic, green pepper and fresh chilli and stirfry for 2 minutes or so
Add tom puree and turn up heat high
Add Methi , mix powders stir
Add chilli powders and squeeze in lime juice and singe those spices
 Add pre-cooked chicken and coat
Add a ladle of base and chopped coriander stalks
Reduce right down then add another ladle of base and reduce some more
Add tomatoes and final ladle of sauce, reduce heat to medium and simmer 5 minutes
 Add fresh coriander leaf

Heres one I made last night but had to use red pepper in place of green, green works much better

The naga masala powder is from Chillies on the Web (http://chilliesontheweb.co.uk/herbs-spices-and-seasonings/naga-masala-seasoning)

The mix powder is Abduls 8 spice (http://www.curry-recipes.co.uk/curry/index.php/topic,6176.msg61643.html#msg61643)
