Made a Vindaloo last night loosely based on my recipe (http://www.curry-recipes.co.uk/curry/index.php/topic,13087.msg106999.html#msg106999)
I swapped the chilli paste for a Fresh Carolina Reaper chilli
Swapped the dried chillies and deggi mirch for 1Tb Kashmiri and 1Tb extra hot chilli powders
Swapped lemon for fresh lime
Swapped tinned toms for watered down tom puree
I rolled fresh blended garlic into the naan prior to cooking and then finished with butter ghee
Have to say it was one of the top 3 curries I have made, lip burning heaven

looks good, that's an aweful lot of chilli powder to put in 1 curry though, I put in half a teaspoon of naga jolokai powder into my curries and it gets them vindaloo hot, I used to put in Kashmiri and added about a tablespoon but I found it detracted from the flavour of the curry I was trying to recreate,food looks good though, bet it was very hot

The Vindaloo is beyond me but those naans....wow.

What a coincidence, I also made vindaloo last night (well, for last night) using your recipe (as a basis!). I used my own ground chillis, no kashmiri. The result a brown curry for a change. I really like the use of cider vinegar in it.

Hi Andy, your food looks vibrant and inviting, thanks for posting a detailed explanation, I agree with all your points and find myself using very simula process and achieve stunning results. The lime is such a versatile fruit and gives outstanding flavour to a dish.
