Very nice looking indeed Chewy.  Regarding the Bullet Chillies... do you find them bitter at all, and do you scrape the seeds/pith out before cooking ?

Cheers Chewy.

The reason I asked is due to bitterness in a Jalfrezi that I experienced at a restaurant recently, which I associated with the Bullet Chilli seeds/pith in it... it seemed to taint an otherwise excellent curry.

Interesting that you've not experienced bitterness with them (seeds/pith in and out).  I am really trying to put my finger (no pun intended) on the cause, maybe unripeness of the chillies used together with the pith/seeds left in.

Know what you mean about finger/birdseye/thai chillies... the sharp piquancy of them is a fine line with bitterness.

Hi Chewy,

A couple of questions.
1. I remember you said that your favourite pickle is the Priya ginger pickle as shown in your pic
Where can I buy some. Looked in several Asian stores but no luck so far.
Do you use it in your cooking of as an accompaniment?

2. I love your videos as they are very clear, entertaining and informative.
Any chance you will return to regularly producing more? For example this Kofta dish?

Cheers.
James

RS.
You might be right, but chillies being fresh and random, you never know what your going to get.
Have you ever had bitter chillies in your own cooking?
If so, just do a seed in / deseed  comparison test.

James
1. Very strong and well processed Pickle, good on its own.
At first I found it was the key to my Adraki Chicken/Lamb dishes I created.
but I started using small amounts in other dishes with really good results.

Sometimes its difficult to get locally, but itadka do it online, cheaper than some shops.

2. Making more vids, yes, probably start with my Midnight Snack recipes and refresh
my Vimeo channel, maybe even do a blog to keep it all together for ref.

Chewy do you have a "recipe" or method posted anywhere on here on how to cook your restaurant style chips?

You just need a crinkle cutter and then cook the chips in the normal way.

Or you can buy them ready-cut/frozen (not that CT would sink to such depths, of course).

Spot On London :)

No black art Liam, just fry chips @160 halfway about 4mins, (No colour) drain and set aside, while you do the curry or something else.
Then when your ready do the same again with the chips @180 until golden and crispy, about 3-4mins.

Looks a bit insipid, Chewy, and very oily - apart from that, top marks :)
Lol  ;D ;D Just noticed this Wee Snipe from Sniper Garp, tasting photographs now. ;D
That's not oil, its BIR juice, education is a wonderful thing, keep watching  ;D ;D

Correct Phil, as frozen are a different thin cut and hardly a BIR restaurant style.

cheers Chewy

You really have a cheek, Chewy, referring to me as a sniper, when almost every post you make criticizes someone, belittles someone, talks down to someone, makes unfounded generalisations, or makes comments as facts, which are not factual.

BIR juice my arse - the brown stuff around the edge may be but the yellow stuff is oil. As for watching and learning; I have nothing to learn from you, as you are not looking for the same thing as I am. For instance, brown, oily, insipid curries don't appeal to me and I have never been served chips like that in any restaurant. But, then again, you aren't actually looking for anything as you seem to know it all (in your mind).

As the old saying goes - don't be a d**k all your life, take a day off  :)

Well, perhaps that's true "oop North", but down here in the abundant South frozen chips are neither necessarily thinner than those shown, nor are they necessarily non-crinkle or non-restaurant-style :  they come in a wonderful assortment of sizes, shapes, finishes, coatings and even flavours, and I for one would not willing be without a pack in my freezer ...

P.S.  Tut tut, Garp : such language on a public forum.  I hope you will rapidly explain to George that you meant "dork" before he leaps to another conclusion and converts it into "don't be a (moderated) ...

Admin should intervene here.

The Sniper Garp reminds me so much of CA, he too had Inadequate personality disorder.

But this is very much Darker and Racist, do we want this kind of thing on here.

This is as far from comic banter as you could get.

Some people have learned nothing from the last week......or indeed all of their life.

We obviously have very different interpretations of humour, just as we have about good curries, Chewy.

Maybe you should take yourself less seriously, my friend :)

to be fair to Garp, Chewy always has to criticise in some form when he comments, no need for it to be honest

And this is what it will look like when it arrives Gav! Mine got here last week but I've not yet cut a vegetable in anger. Blade feels a bit blunt but it should get the job done. Banggood prices make for addictive shopping huh? I'm on there daily ordering useless junk

Always try adding "BESTBG" or "BGDEAL" discount codes at checkout, it takes a percent off some items (only works sometimes but worth trying)

Don't think any of the crinkle cutters are sharp but they do the job. Your right about the addictive shopping and useless junk. I couldn't resist the garlic peeler for

Tried it out tonight. Sharpness wasn't a problem but the depth of the wiggle is fairly shallow. Still it's enough to stop the fries sticking to each other in the fryer and the result was good enough for me.  I used Chewytikka frying method posted above in this thread but my potatoes probably have too much starch because they coloured up a lot.
