Title: Handi Pans
Post by: GulfExpat on April 30, 2015, 05:46 PM
Vah chef, an Indian chef on Youtube, uses a "handi biryani" pan to cook biryani recipes.

It looks like a casserole pan with a bulging base: youtube.com/watch?v=iJUdcbCoIcA

Does it make a difference if you use this pan or a standard casserole pan?

I do Biryani in an enamelled cast iron casserole and don't bother with sealing it up with dough and they work out fine as far as I'm concerned.
