Title: Jb's/ChewyTikka base hybrid, pressure cooked.
Post by: SoberRat on May 27, 2015, 08:54 PM
Hi all. I've been making my base like this for a while now with some really good results. It's pretty much Jb's base ingredients but with the ideas that chewytikka uses in his pressure cooked base.
I hope that someone will find this useful.

Very, very interesting to me because my last batch of jb's base was done in a 6 litre pressure cooker with about 2.5kg onions and I did not dilute before freezing... I look forward to giving this a go.  Probably the clearest instruction method I've seen on the Internet too, did you copy the format or your own doing? Whatever thanks for posting!!!! 25

Thanks Mattie. The format was just something I kind of improvised as I was doing it, although it's a bit like a video in stills, or a comic style way of doing it, maybe next time I'll do the writing in bubbles. ;) I used a 4ltr pressure cooker by the way as it was only 1kg of onions but I guess it will work with the larger pots.

Thanks George and MA, glad you liked it.

I think I will give this a go. I know the base sauce is just that but do anyone put chillies into the base sauce ? I do but only a few birds eye chillies.

Having just read all 41 pages of JB's base sauce page I kind of wish I had found this first.

Thanks to SR and JB for all of their hard work.

Looking forward to getting started on this sauce once my existing one is finished.

Hi Jeepayne. Its worth reading all of those pages TBH because there are all sorts of little bits of info within those pages.

Thanks SR, really good base with great instructions. I made this on Saturday following the recipe and instructions exactly except I had no green pepper so used all red. The house smelled wonderful (to me) with all that fried garlic and I love the sizzle when this was added to the base. I've never sieved a base before but this did remove a small amount of pepper skins so resulting base is super smooth. Not had a chance to use it in a curry yet but I have high hopes!  ;D

Thanks so much for this. Just an incredible base and done in no time in the pressure cooker. That roasted garlic...  :love eyes: :love eyes: :love eyes:

Probably the clearest instruction method I've seen on the Internet too

Hearken to these words and tremble, all ye who publish supposedly informative videos with mind-numbing muzak and no voice-over ...
