Good stuff lc, much easier than cooking individual portions.
Is that the SECRET ingredient in picture 3?

Hi Andy,  ;D all the spice in photo 3 went into the curry, along with a few other things not in the photo! But for anyone thinking you can say make 50 portions you can't just use 50 x the amount of spice and oil!! It won't work out!

You can see the spice to chilli powder ratio is way of what is normal.

Also getting your seasoning right is not straight fowards.

Just got my feedback from this small function, I was told people were lining up to scoop up the leftover sauce ;D

This is exactly the post that needs to be referred to in all of the preceding threads containing "discussions" about spicing levels for bulk cooking.

LC, perhaps you would be so kind as to further explain your ratios and proportions.

Hey LC, any chance of going here again? I've been lovingly recruited by SHMBO to prepare a bulk cook of some curries in 2 weeks time and I'd really like to know your rate of non-proportional spice variation for increased quantity.  I'll be cooking 2 or 3 different dishes plus rice and naan for 30 - 40 people.

That is certainly a possibility, but I tend to agree with Frank -- this forum is now moribund, and needs either urgently reviving or putting out of its misery.  I would suggest that those who can should archive as much as possible of its content, because once lost it can never be re-created.

I will check out the other bulk cook recipes. Thanks dalpuri. It is a shame lc hasn't returned to give the details as he said he would 6 weeks ago.

I'm just still curious to know about reduced spice ratios for increased volume preparations and I have a big job in the next 3 to 4 days.

Does reduced spicing apply to bulk cook pre-cooked meats?
Is 1.5 * spice for each double in volume apply or not?
