Title: Hot Ketchup
Post by: Madrasandy on September 22, 2015, 08:00 PM
Had a play in the kitchen the other day trying to create a hot tomato sauce, tinned toms, puree, garlic, vinegar, lemon, salt, sugar and spices and heat came from fresh naga chillies

It was lovely and tomatoey, ph was correct without an overpowering vinegar taste, cositency was nice and thick but pourable and it had a great heat that built, cant stop eating it, definate winner for me
