That sounds a very interesting dish, Tempest, but I don't think my steamer will hold a 1Kg chicken unfortunately.

would a pressure cooker be an alternative to 'steaming'?

Almost certainly, and I could put the steamer tray in to make it into a "real" steamer, but if I were to put the lid on and close the valve I imagine I would have to considerably reduce the cooking time; perhaps leave the lid off ...

We have a deep steamer basket, like the one above, that fits all standard size saucepans and it will accommodate a small chicken.

The shooting season starts today and my first day out is next Saturday so more importantly the steamer will easily fit a pheasant or a brace of partridge.

Many thanks for that Amazon link, Tempest -- I think I may well invest in one of those.

Could also chop the chicken up (into 4 pieces) for the Charga and steam 2 at the time.  I made it a while back with a packet spice.

Update on this recipe.

I made this tonight with two pheasants, a 650g hen and an 820g cock. Shot Saturday morning and in the marinade Saturday night. Didn't bother plucking the birds, just skinned them as the recipe called for. I doubled up on the marinade and the result was ok. Not as strong as a tikka or tandoori marinade would give.
The big thing for me was the moistness of the birds. Pheasant is a tricky bird to cook and more often than not ends up dry. The steaming retained the moisture and is definitely a cooking method I will use in the future for game birds

The steamer I intended to use was too small for both birds so they went into the IKEA steamer I bought a few weeks back. On their sides both birds went into the same steamer basket.
