Go to one of the recipes, e.g. Bhuna, and instead of chicken, substitute it with mixed veg of your choice.

It just never seems as good as the meat ones.  Am I missing something?

I don't personally think that a simple substitution of vegetable for meat will work; I would go for a real vegetarian dish such as masala dosa, idli sambar, or any of the southern Indian vegetarian specialities.  I am a carnivore through-and-through, but a good masala dosa is as good as roast beef to my mind.
