Thanks Phil for your advice! We will be doing the popadoms as and when they are needed and everything else we will keep it how it is for now.

I have no professional kitchen experience but when it comes to fresh herbs - coriander, parsley etc, it was a revelation to find that my missis stands bunches of them in glasses of water in the fridge door.  Such an improvement in lifetime.
