Title: Base Sauce - should I remove the oil at the end of the process?
Post by: Tom Laird on October 27, 2020, 02:08 PM
Hi,
I am fairly new to this though I've made the "Curry 2 Go" base a couple of time with success.
My noobie question is - should I remove the oil at the end of the process? I have in the past but I can't find a definate answer.
There is so much good info on this forum that I can't wade through it all.
best regards
Tom

In a word, no, Tom (tho' others may disagree).  The essential oils that leach out from the spices when you make the base bind with the other oils rather than with the aqueous elements.  Thus if you remove the excess oil at this stage, your curries will lack flavour.  If your final curry is too oily for your taste, then by all means remove the excess oil at that stage.

I believe the spiced oil is then stored for use in other curries and bass, isn't it?

May I humbly suggest using less oil in the base to start with?
