Title: Whats In Your Garam Masala?
Post by: Chilli66 on August 17, 2021, 06:06 PM

I've not been cooking BIR for a couple of years but am back again.

Having never really liked shop-bought Garam Masala (too much cinnamon or something) I am interested to know if anyone thinks they have the perfect GM recipe and is happy to share it,

Cheers,

Pete.

When I used to experiment with masalas my favourite garam was Kris Dhillon's:

1 tablespoon coriander seeds
1 tablespoon cumin
1 teaspoon green cardamoms
1 teaspoon cloves
1 teaspoon black peppercorns
2 sticks of cinnamon, approx two inches in length
2 bay leaves
½  small nutmeg
4 black cardamoms

Just made this today.  Honestly can’t remember where I got the recipe.

1 TBSP coriander seeds
1.5 tsp cumin seeds
Seeds from 1 black cardamom
Seeds from 5 green cardamom
2 Asian bay leaf
2” piece cinnamon
1/4 tsp fennel seeds
5 cloves
1 star anise
Piece nutmeg 1/4” x 1/4”
6 black peppercorns

I’ve done it pan roasting the spices, cooling before grinding and also just straight grind.
Works well for me.  Cooking with Taz base currently.
