Does anyone know where I can buy a frying pan that the typical BIRs use. They are about 10-12 inch diameter, sloping sides and all metal - not sure if they are stainless steel or aluminium.
The only ones I can find are all teflon coated and that just won't do due to all the scraping around with the chef's spoon :)
High street or online.

These are real chef's pans,not the sort used by all those TV cooks. Brand name is Black Iron, although they are actually made of mild steel.They need more care than the usual domestic type pan, but are great to use. Any catering supplier should have them, but you may have to order the size you want. A 9" Black Iron omlette pan is just about right for normal portions of curry, evaporation is ok and a stainless steel cook's spoon completes the kit.

Thanks for the replies. The black iron ones look similar, but the ones I found on the web have a solid metal handle (that looks like it could get seriously hot). This one looks llike a hollow metal handle and is more like the ones the BIR uses

Blade, you shouldn't cook anything acidic in an aluminium pan and curries are definitely acidic. I think the ones on your link are aluminium

I have 2 of these one slightly smaller and the handles don't get hot unless u leave them above a flame, which ive done I must admit, but only the once ::)

John Lewis used to do pressed iron pans of various sizes which work excellently. I'm not sure if they still do them. Unlike S/steel they're not very "sticky". I would avoid aluminum with anything acidic as it's been linked to Alzheimer?s disease . So no lemon juice, vintager or toms, i.e, not many curries.
Your best bet is to look through the yellow pages for catering suppliers.

hi guys/girls
i bought my pan from asda. it is 8 inch base( 9"diameter acrossthe top) stainless steel frying pan it is the perfect size and it only cost ?3.97 and it has a hollowed metal handle and it is quite easy to use as it is light and has a good feel to it.although i am cooking on an electric hob >:(

Yellowfinger - not sure if that one has a black teflon coating inside - hard to tell from the picture.
It's available with or without, see the drop down box to the right of the picture.

I tried those dropdowns but it didn't change the picture - now that I've read the actual descriptions, this makes sense now.
I think I'll head off to sunny Glasgow city centre tomorrow to check these out.

I don't use a frying pan !! :o :o :o
I use a large pot( 12" dia 10" high etc..) so i can cook as high as i like without it spitting all over my wifes lovely White Kitchen.
But yes i do still tend to get one or to spots on the Tiles at the back of the GASP !! Electric Hob ( Turbo Charged thing were the Rings heat up instantly ). ;D

Snap Woodpecker! Thats the exact same pan that I have and is great value and does the job extremely well as it has higher sides than a normal frying pan. I thoroughly recommend this pan to anyone ?3.97 Asda.

I'll see how I get on with this one. Looks perfect for scraping out the dregs with the chef spoon.

On these recommendations i took a 30min drive out to my closest ASDA and picked up one of these 22cm frying pans,
I Haven't used it yet but it looks the business and at the price of only ?3.97 they are well worth the money. I've been looking around for a good frying pan but most these days are Teflon coated, this one isn't coated at all just the ones used in BIR's.

Hi All,
Like Darthphall I also use a taller pot 9" across and about 8" high. I got it from my local large Asian Hardware shop. It is what they use to cook their curries in at home and is called a "Haandi" (pronounced "harndy"). It cost ?12 but is all stainless steel with no teflon coating and has a very thick heavy base. This helps spread the heat evenly and seems to stop burning and sticking. It also has a lid when making the curry onion base so keeps the wife happy it isn't all on the ceiling! They also sell a range of steel fry pans which on enquiring is what the local restaurant chefs buy.
