I'm not sure where to start out of 40 bases (above) which one do I use? The members poll seemed to be a bit of a damp squib with no winner it appears. Do restaurants use so many different pots of the stuff? Is there 1 base/gravy on this site in which everyone uses and has succesfully re-created all curries which are on offer in our favourite Indian Restaurant. I am keen to get started but I am confused as to where to start to attain my goal.
Sorry to be such a pain, but I want to get things right from the start.

currygall , there is no "right" place to start. Pick a base and work on it. There is no doubt that a base must be matched with the recipes. You can't mix n match.

Hi CurryGal and welcome to cr0 8)
I suggest you try one of the following, as a starting point, as they have all been used extensively and have had good reviews:
- Infinforu's "good curry base" - http://www.curry-recipes.co.uk/curry/index.php?topic=923.msg8159#msg8159 (http://www.curry-recipes.co.uk/curry/index.php?topic=923.msg8159#msg8159)
- Dathphall's - http://www.curry-recipes.co.uk/curry/index.php?topic=1808.0 (http://www.curry-recipes.co.uk/curry/index.php?topic=1808.0)
- Stew's (Admin's) "New Base Sauce Recipe" - http://www.curry-recipes.co.uk/curry/index.php?topic=1894.msg16359#msg16359 (http://www.curry-recipes.co.uk/curry/index.php?topic=1894.msg16359#msg16359)
Hope this helps! Please let us know how you get on 8)
Oh, and I tend to have a different opinion than many others have, it seems, about mixing and matching curry bases and main recipes.
I believe you can quite satisfactorily mix them, provided that the curry base is lightly spiced, as most decent BIR curry bases are.
If you chuck loads of spices (e.g. chilli powder) into the curry base, you obviously need to chuck less into the main recipe. 8)
Edit: Sorry, I phrased this poorly. What I meant was that if a particular curry base has lots of a particular spice in it, the main recipe obviously needs less of that spice accordingly. For example, if a curry base has lots of chilli powder in it, the main recipe obviously needs less.
Maybe this is a topic for separate thread! 8)

But Secret Santa says "You can't mix and match" How much chilli do I "chuck" in ? and above all which spices do I also add?, and of what quantity? I'm lost here as there is such a differing of opinion. Is there a chef who actually cooks in an Indian restaurant here who can give a difinitive answer as to which direction I should pursue?
We can't wait to get started cooking. However, thank you for your input and help. currygall.

Hi Curry Gal,
Differences of opinion are a fact of life, I'm afraid, it would be a boring life without them! :P
I suggest you try one of the curry bases I mentioned and use it to make a curry of your choice using recipes in the main recipe section.
All I can say is that, in my opinion, you can use any of the curry bases that I mentioned, in conjunction with a main recipe of your choice, to make a successful curry. Try it and see.
If you are hesitant to "mix and match", I suggest you select a curry base where the author has also suppied main course recipes.
For example, Darthphall has supplied a madras recipe for his curry base as follows.
- Base: http://www.curry-recipes.co.uk/curry/index.php?topic=1808.0
- Madras: http://www.curry-recipes.co.uk/curry/index.php?topic=674.0
There are one or two other curry bases where the author has also supplied main recipes (e.g. Gary - "parker21" - has supplied his Rajver curry base and his madras and vindaloo sauce recipes):
Alternatively, if you can be more specific about the type of curry you're looking to make, I can be more specific about which curry base and main course recipes to use.
Perhaps post your specific request in the "recipe requests" section here: http://www.curry-recipes.co.uk/curry/index.php?board=4.0 (http://www.curry-recipes.co.uk/curry/index.php?board=4.0)
Alternatively, if you are looking for more prescriptive recipes and techniques (and more limited options), I can direct you to an alternative site that you might find more suitable. You may already know of it or be a member there of course :P.
Please feel free to send me a personal message if you would like further details. 8)

Hi btbw (Cury Cannuck)
Thanks for a really informed post. Why not pop off back to whence you came.

Hi Currygal,
If you have a good look through the threads you will see that a large amount of info is actualy from chefs themselves. We have had a few members claiming to be chefs or associated with a restaurant but so far they have all turned out to be fakes.
Your best bet is to just get stuck in and see how it goes, if you need help with a particular recipe just ask.

These "hot links" don't seem to work for me Stew? It says that it's "missing or off limits" to me and takes me to a sign-on page?

You're over six years late - the previous post was in 2008!

And you are the member from whom I would expect nothing less* :-*
*On reflection, a foolish thing to post.
-
DO, you seem to have a real problem with Cory Ander. When he was a member, her and I crossed swords on many occasions, and I detested him for his intimidatory bullying style. But when he left, I forgot all about him; as he is no longer a member, why don't you get over your angst and move on ?

-
Phill, you're right of course. He was extremely ofensive to me on another site, and of course I had no 'right to reply,' as it were. So I guess I say the things here, hoping that they will still get back to him! (The ****** ;) :-X )
George I apologise for annoying you.

Hi
George. Is it within your capacity to move in correctly posted recipes or just Admins sir ?

George I apologise for annoying you.
It's good of you to say that. From my point of view, there's no reason you can't quickly move from someone I see as a trouble maker, to a member who is as valued as almost everyone else.
I'll be honest with you - the latest thing to get my back up is your 'slogan' thing reading to "never feed the Daily Mail reader - ever". I assume you mean me, not that I consider myself a Daily Mail reader, as such. Why make such a provocative statement? Previously you were using swear words far too much, and then there was the huge flashing banner. I even wondered if you might be CA in disguise.

I'm sorry but I don't understand your question. Could you re-phrase it, please

No George I'd forgotten about you and the Mail discussion- such as it was. Someone here (not you!) made a crack about me having 'Daily Mail opinions' (!!!!) and that is just my gentle reposte ;)
Anyway, I will now demand an apology for you insulting me!

OK, I apologise, and I admit it was like tit-for-tat in response to your comment about Daily Mail readers. I will now remove or edit my first post within this thread in the modern era. Thank you for removing the line about the Daily Mail. Their newspaper/web site is so popular, that you risked many people wondering if you were referring to them. That's the risk, I suggest.
-
No edits required George, I am not really insulted- I was kidding- I meant you 'insulted' me by saying you thought I was CA :o :'( Aaaargghhhh! :D

Thanks. I can delete one post and sort-of-manually post it elsewhere (or let the author re-post it) but I can't move a post as such.

I agree, there are few worse accusations - than suggesting anyone might be CA.

Hi
George. They are posts I've seen dropped into the wrong threads by others (not me) I've reported to Admin but nothing has been done. You would not start to look for pre cooked BIR lamb in the "talk about anything other than curry" would you but thanks for the clarification.
