Ingredients:
- 1 portion of pilau rice (preheated in microwave)
- 2 tbsp fresh vegetable oil
- 0.5 tsp salt
- 1 tsp spice mix
- 0.5 tsp dried fenugreek leaves
- 1 egg
- 1 tsp fresh coriander (chopped)
- 3 tbsp onion/green capsicum mix precooked as follows:
+ 2 tbsp chopped onions and 1 tbsp chopped green capsicum
+ cover with water, add 0.5 tsp of spice mix and 0.25 tsp salt, and simmer for 4 minutes
+ drain and add a little vegetable oil to prevent the mixture from drying
Method:
- heat oil and fry precooked onion/capsicum mix for about 20 seconds
- add salt, spice mix and dried fenugreek leaves
- fry for about 10 seconds (high heat)
- crack egg into pan and allow to set (about 20 seconds)
- stir to evenly distribute ingredients (for about 30 seconds)
- add preheated pilau rice and stir
- add coriander and stir
- sprinkle with chopped coriander and serve
Notes:
- process should take about 3.5 minutes in total
