Post by: Cory Ander on April 03, 2010, 04:17 AM
From: dipuraja1:

To make onion chutney you will need 2 chopped onion,1 chopped tomato,1 chopped quater of cucumber,1 1/2 teaspoon of garden mint now mix it well. To make mint sauce you will need 1 cup natural yogurt,1teaspoon of garden mint,3tablespoon of blended mango chutney, pinch of yellow food colouring,3tablespoon of sugar,2 teaspoon of lemon juice now mix it well that's your mint sauce.

it's just pure heaven this - i'm going to have to relent and get some of this yellow colouring.

the Coleman's garden mint is exactly what i use and know its real good stuff.

the sugar seeing it in the cold light of day is as i'd expected and a real nightmare on the heath front. at least we can tweak it if we choose.

not made the onion chutney at home before but this is now going to change.

Dipuraja on this alone is star man for me.

Jerry,

The mint sauce is exactly as I would expect it but the onion chutney falls way short of what I'm used to.  Everything was there except, my TA doesn't put mint in it, he uses coriander instead, and wait for it.........tommy ketchup....a reet good squirt of the stuff ;D

Mint Sauce could not be any simpler than this....... :)

500ml Pot of Greek yoghurt
Sugar to taste
Water
Small amount of Mint sauce
Green Food Colouring (Optional)

Method
Mix the sugar into the yoghurt until dissolved. Add the water to make a runny consistency. Add a small amount of mint sauce and mix together. Add a small drop of green food colouring if desired.

Chill and serve.

Got to say, more mint, no colouring. Depending where I've been the sauce is red, green or yellow. Would be good to leave it mint green to my taste. Just with more mint! Greek style yoghurt is the best though to my taste, and gets right as you whip it up with a fork.

Razor

to ManUify this recipe simply replace the red wine vinegar with good old chippy vinegar and voila - Old Trafford Onion Pickle is within your reach.

I've made this twice now and it's really good, i don't use the food colouring as i don't think it needs it, ;)
Try adding a pinch of paprika it works very well ;D
