Title: Naga Chicken and Mushroom with Keto Garlic Naan
Post by: Kashmiri Bob on February 25, 2022, 11:23 AM
Very tasty.  Second go at keto naan.  Getting there.  Very acceptable and certainly better than no naan at all.

OK, let me confess my ignorance — what is a "keto" naan ?

You can't be that addicted to salt and sugar that you haven't heard of the keto diet. Can you?

Basically you ditch carbs and live on fat and protein, forcing the body into ketolysis whereby it burns fat for fuel instead of glucose. I'm guessing this "naan" is almond powder based.

Yes.  I treat all diets as the work of the devil.  As my old friend Dennis Fotheringham was fond of saying, "You eat what you like, and you lie where you fall".  Actually he said "You drink what you like, ...", but the idea was much the same.

"Ketolysis".  Wow.  A new word.  I shall have to consult the OED.  Which I see appears as oblivious of this dietary fad as I :

Quote from: the OED date=today
ketolysis  n. Brit. /kɪˈtɒlᵻsɪs/, U.S. /kiˈtɑləsəs/
decomposition of ketone bodies.

1937   Amer. Jrnl. Physiol. 119 734   Any reduction in the ketosis consequent to carbohydrate administration must be due to either a decrease in the rate of the former (‘antiketogenesis’) or to an increase in the rate of the latter (‘ketolysis’).
1938   Jrnl. Biol. Chem. 126 106   Liver slices from a well fed monkey have a very low rate of ketolysis as compared with liver slices from well fed rats, rabbits, and guinea pigs.

I love naga chillies but closest I can get is ghost which aren’t quite the same.  I bought a jar of Mr. Naga pickle which is great but pricey.  Your dish looks very good BB.

Yes, the main ingredients are almond and coconut flour, with loads of mozzarella cheese.

But I now think that "keto", in this context, might in fact refer to a "ketogenic diet" rather than to ketolysis per se. :

Quote from: the OED date=today
ketogenic adj. Brit. /ˌkiːtə(ʊ)ˈdʒɛnɪk/, U.S. /ˌkidəˈdʒɛnɪk/, /ˌkidoʊˈdʒɛnɪk/

1930   Sci. Amer. Nov. 391   This is called a ketogenic diet, because it tends to produce an excessive amount of ketones and their derivatives in the blood.
1973   Nature 2 Mar. 74/1   He was interested in the mechanism of action of ketogenic diets which were then used for the treatment of urinary tract infections.

Like everything in the keto world you have to look at it with rose tinted glasses. Cauliflower pizza base anyone?

BTW (Phil) I bet you've heard of the Atkins diet? That's a keto diet.

I only got interested in it because I have a friend who is type 2 diabetic and this diet can be useful for them.

Well, ketolysis is the breaking down of ketones. The state the body enters when doing this is called ketosis. Don't know if that makes it any clearer?

No, quite seriously, fad diets make zero impact on me and I am unaware of the names of any of them.  Something scientific, such as a gluten-free diet, I fully understand.  But some hot-air theory to which someone has given his/her name does not even impinge on my stream of consciousness.

Seriously Phil you must have been living under a rock. You couldn't pick up a paper (remember them?) without the Atkins diet being mentioned when it was at peak fad. But the concept isn't "hot-air theory", it's well established science. It's used for example on people with epilepsy as it apparently reduces or stops the fitting.

It is indeed delicious but only as a dip for nachos in my opinion. I tried it in curry and to me it ruins the curry. An acquired taste perhaps but one which I'm in no hurry to acquire.

And, trust me, Phil is a leading expert on 'hot-air'

Difficult to get near your arse, with your head so far up it.
