Anyone have any BIR recipes for a slow cooker?
Is it even possible to cook a tasty BIR type of curry in a slow cooker?
-
Hi John -
I use a slow cooker on a regular basis for some curries not containing yogurt or cream . If you brown the meat first then add any of the base sauce recipes on this site , you can achieve a good result . Additional spicing can then be added during the final stages of cooking to enhance the flavour. Hope this helps .

I'll give that ago!
have you tried making the base sauce in a slow cooker? just wonder how it would turn out with whole spices being slowly cooked for hours?

Hi John,
I haven't tried it myself with curry bases but have used a slow cooker a lot.
If I used whole spices I would "fry" them briefly first as in a "Tarka" to release their flavours before adding to the pot.
The other thing would be to add less water/liquid to start with as the covered pot does not allow for evaporation and you are likely to end up with a thinner watery sauce.
One big plus with a slow cooker is the meat/chicken ends up very tender and not dried out at all.
I think it is an area worth a bit of experimenting. You can imagine adding the ingredients before setting off to work and returning to a completed base sauce.......magic!

Concur with Ray...the spices ( tarka ) should be added at the end otherwise the flavour will be far too over-powering .

I can endorse the slow cooker. I use it a lot but particularly for beef curries. The long, slow cooking certainly does tanderise the meat to a point where it falls apart in your mouth when you eat it.

I doubt very much if hardly any BIRs use a slow cooker, so there's highly unlikely to be any "BIR recipes" as such. Now, you can probably achieve similar or better results with a slow cooker than they do with a furnace under a frying pan but then it wouldn't be BIR, would it?!
