Apologies for the delay in this test but hopefully this will be complete in the next few weeks.
Solarsplace has kindly agreed to step in for PeterandJen who is likely to be away for most of the month so unfortunately is unable to take part.
Fi5h has already completed all of his with some interesting results.
Myself, Razor and Axe will get ours done as quickly as possible. I've got all the ingredients on order which will hopefully arrive tomorrow in time for a weekend Tikka-fest.
The recipes we are testing are:
Kushi - http://www.curry-recipes.co.uk/curry/index.php?topic=4496.0 (http://www.curry-recipes.co.uk/curry/index.php?topic=4496.0)
CA - http://www.curry-recipes.co.uk/curry/index.php?topic=1555.0 (http://www.curry-recipes.co.uk/curry/index.php?topic=1555.0)
Dipuraja - http://www.curry-recipes.co.uk/curry/index.php?topic=4432.0 (http://www.curry-recipes.co.uk/curry/index.php?topic=4432.0)
Blade - http://www.curry-recipes.co.uk/curry/index.php?topic=874.0 (http://www.curry-recipes.co.uk/curry/index.php?topic=874.0)
Maddhur - http://www.curry-recipes.co.uk/curry/index.php?topic=51.0 (http://www.curry-recipes.co.uk/curry/index.php?topic=51.0)
Lasan - http://www.curry-recipes.co.uk/curry/index.php?topic=4182.0 (http://www.curry-recipes.co.uk/curry/index.php?topic=4182.0)
I know there are lots more good options but we had to draw the line somewhere.
-
Really looking forward to this. Thanks Chris for pushing it along.

I've got mine marinading ready for a taste test tomorrow. They are 6 very different recipes and I'm looking forward to trying them all. I've got my new big skewers ready to rumble.
I timed each one which I'll use to base the 'ease to make' score. The ones that needed extra blending or grinding will also lose 'ease' points. Texture wise I imagine they should all be identical.
Left to right: Maddhur, CA, Dipuraja, Lasan, Kushi and Blade.

I just finished my taste test of all 6 and I must say the standard was very high. 3 of them are easily as good as you get in a BIR.

but wot was the best chris ???
-
Hi Chris/Solarspace,
Quick observation;
One of your's SP is very vivid red where none of yours Chris, are? Have you just left out the food colouring Chris, and if so, for what reason?
Cheers guy's
Ray :)
-
Gazman - you'll have to wait until I have everyones results in. I don't want my thoughts to influence other testers scoring.
Razor - I went easy on the food colouring. Only two recipes wanted it, one was optional, the other wanted orange which I didnt have. There is no score for appearence so it won't have affected the results either way. The vivid red one does look good though doesn't it!
-
Hi Razor
With the Tikka I have done so far, I made cut down versions of either 1/2 or 1/3 of the original quantities - whatever divided the most easily. I checked and treble checked the ingredients and quantities I used and and confident they were made to specification.
If one reviews the notes section in Dip's recipe (http://www.curry-recipes.co.uk/curry/index.php?topic=4432.0 (http://www.curry-recipes.co.uk/curry/index.php?topic=4432.0)) he specified red colour for tandoori and yellow for tikka - I used red as the yellow ran out and I knew it would not affect the taste. However people often east with their eyes and I wanted to give the tikka a good colour.

Taste testing all the tikka is a hard job, but somebody has got to do it!:

Solarsplace they all look quite edible. I notice you cooked them in chunks rather than half a fillet. I know that now most BIRs cook the half fillet method but in the past I used to get the chunks like you made. You can tell because the marinade is all over in the chunk method.
I was really annoyed the first time I got tikka by the fillet method as it had two unmarinated sides. Just one more cost cutting BIR trick I suppose.
-
Hi
Got the 'chunks' marinading last night for the final 3 in my test. Got to say like SS, I think chunks are the way to go if you like a high tikka to meat surface area ratio like me ;)

Good luck Tikka....
-
Good man, they look great. How did you like the new skewers? I thought they were fantastic.
-
Hi
Thanks!
Those skewers are great, I would not hesitate to recommend them to anyone who is in the market for some!
Tried to make Razors kebabs on them which was a bit of a balls-up first time as the mix kept breaking off - you have to get quite a firm consistency I think.
But for Tikka they are the business :) - the extra metal thickness helps the tikka cook from the inside too, lovely sizzle as you slide the cooked tikka of them.
cheers all.
-
Hi Guy's,
Finally managed to get my tikka's marinating last night, and will cook all six tonight at about 19:00.
Suprising how different each look and smell. Can't wait to taste. I scaled all recipes down to 1/3 of the spec recipes.
I can tell you now, and I'm sure the rest of the testers will know which one I'm talking about, there is one that I will never ever ever do again. I don't care how good it tastes. It could be nectar from the gods for all I care, but it won't see the light of day in my kitchen ever again. It was definately not BIR, that's for sure.
What a bollock ache it was :( especially because I don't have a grinder and had to hand grind all the seeds.
Anyway, looking forward to scoffing the results later, and hope to post piccy's on this thread, and send the results to Chris later.
Ray :)
-
LOL, I had to hand grind mine too in the pestle and mortar. I timed all mine (not including making G/G paste). The fastest was 4 minutes, the longest 18 minutes. That's a long time to make a marinade.
-
Hi Guy's,
So here's my Chicken Tikka tests as promised. Couple of nice suprises in there, and one real shocker but you will have to wait for Chris to publish the results, then make your own minds up.
All the Tikka's marinating;
Skewered, and ready to go;
Cooked under the grille on high, 2 mins each side, 8 mins total;
A piece of each, ready for taste testing;
Didn't think I was going to enjoy doing this one but thankfully, it was quite pleasurable really.
Two of them turned out really good, two of them was ok, one was passable and one just wasn't good at all.
After teating each piece, I made myself a chicken tikka madras, using a piece of tikka from each recipe. Unfortunately, the dominating flavour was of the really poor tikka.
Glad I done the test though, and can't wait for the final results.
I have a good idea of which will come out on top ;)
Ray :)
-
Nice test Ray, let me guess which one you did not like.. cardamon?
cant wait for the final results.. so we can start on the bhajis
-
Hi Fi5h,
Nice test Ray, let me guess which one you did not like.. cardamon?
He he, whatever makes you think that? lol,
Ray :)

Ha ha! thought it was just me! - one of them certainly was exceptionally tedious to make, even with a coffee grinder let alone a Mortar and Pestle!.... wonder how it will do in the overall scoring?
Can't wait for the results :)
-
Hi SP
wonder how it will do in the overall scoring?
I've got a pretty good idea, lol ;)
Ray :)
-
I have results in from Me, Razor, Fi5H and Solarsplace. Axe is having trouble getting time to do the test (it takes up a long time!) so I can either publish the results as they are with 4 judges, we can wait for Axe to get round to it, or someone else can volounteer to step in. It's good fun and you will find you learn an awful lot about which spices and pastes work well, and which definitely shouldn't.
Let me know your thoughts.
-
Hi
As I understand it, the whole group test is meant to be a helpful & fun guide to a selection of recipes from this great site, that being the case I think that 4 testers results should be adequate enough for what the test is designed to show?
However, although it was time consuming to do all the tests, I personally really enjoyed trying some new recipes that I probably would never have bothered with (and finding some real jems in there too ;) ), so would encourage anyone else to volunteer.
Cheers
-
Hi Chris,
Just PM Axe, and see what he wants to do. I must admit, the wife wasn't too chuffed when I opted to do the tikka test over, decorating the back bedroom but, hey ho, she'll get over it lol
If Axe is busy, his only chance maybe be at the weekend. If he can find the time this weekend coming, then fine, I would wait until then but if he is struggling then as SP say's, 4 should be enough unless anyone else is willing to step in?
Ray :)
-
He said last week that he might get a chance to get them done this weekend so I'll wait until then.
The bhajis should be fun, but as Axe mentioned now we know how to cook them perfectly, it will be difficult to follow a recipe that does them a different way. I'm all up for improving on perfection though, maybe there will be another surprise or two out there. If nothing else, the other judges will become bhaji experts. Once you crack the method, they are really easy to cook.
-
do we have a final list of bhaji recipes yet
-
I apologise for the delay in being able to do this. I just simply haven't found the time to organise the test alongside work commitments and family life. I don't want to stand in the way of progress, so if your happy to post the results as you have them Chris, please feel free.
I do intend to do the test, for my own satisfaction, perhaps when I have the results compiled you could add them in maybe.
-
brilliant idea this, i can not wait for the results. who evers comes out on top is the first one i am going to try. since joining this site this week i have done the chicken ceylon twice by Cory Ander. so if the tikka is half as good as that i am tipping his to come out on top. i am looking forward to trying all the other members recipes as well. great site this
-
Hmmm, now I just need to remember how I got the spreadsheet into a JPEG last time.

-
Hi fellas,
I think Chris was waiting until the end of this weekend to give the final tester a chance to do it. I expect the results will be published very soon.
Ray :)
-
Are we still waiting for Axe? ;)
-
Can you freeze the tikka once cooked??
-
Can you freeze the tikka once cooked??
yup no problem
-
Thanks,
I am going to do a big batch of this and get out what I need as and when, depending on what I am cooking.
-
Do we have a final result on this test yet?
OOOP's Just found it, Please ignore me. Think I've lost the plot ;D
-
Where did you find it Les. I'm keen to give it a go, or at least use the marinade.
-
Oops - ignore that. Found it too :D
