After watching loads of videos posted here and on the tube, just wondered where and what type of frying pan to buy, anyone know where I can get them?

I think so much will depend on what sort of cooker you are planning to use your new pan(s) with. We have a ceramic hob and induction hob, so we need flat-bottomed pans that are unlikely to scratch the ceramic hob if accidentally slid (and of course the pans for the induction hob need a steel base); we use mainly non-stick, but that means we must use teflon or wooden tools. If, on the other hand, we were using a gas range, we would use a round-bottomed carbon-steel Chinese wok, and could then use stainless steel implements in it with impunity.
Incidentally, my preferred pan for use on the ceramic hob is a flat-bottomed, wok-like, Tefal(R) pan with Durabase(R) Technology base and Thermo-Spot(R) temperature indicator, base diameter 140mm, top diameter 290mm, height 75mm, purchased from Macro.

The pans commonly seen being used in the BIR kitchens are generally Omelette pans. These do vary but you can find them on most catering site Nisbets (http://www.nisbets.co.uk) is a widely used industry supplier.

Yes, they are fantastic curry pans :)
Well worth reading Phil's post above thoroughly too though, as they may not be suitable for all types of cooker. I only have gas so cannot comment further on suitability with other types of hob.
Also, I know ChrisWG from this forum just bought the 28cm version of this pan and found it to be just a little too big.
The 26cm version seems to hit the perfect size sweet spot.

I wouldn't buy higher than 26cm as in my experience they tend to tip and
fall off a domestic hob! i.e. the handle's are just way too long

I've been reading a few older threads as I've been exploring this site in the past week and there are a couple which might have something to add to the above recommendations.

The upshot is that aluminium is recommended, but does anyone know if the meyer aluminium pan that solarspace linked to is ok on a glass topped halogen hob?

I decided to get one of these as my current pan is so big I end up chasing the curry around it. 2 questions - how to condition the pan? (I read you put some oil in and leave it on the heat for hours). 2nd, can you stick them in the dishwasher or does this corrode Aluminium?

No mate, I think you may be getting confused with how to season a carbon steel wok? You don't need to condition an Ali pan, as far as I'm aware?

I always put mine in the dishwasher and it brings it up like new.

Just reading the instruction leaflet which came with my Meyer Aluminium HT pan and it says "The following types of cookware are NOT suitable for dishwasher use:- Hard anodized aluminium cookware; Plain aluminium cookware"
But Razor dishwashes his with no apparent ill effects ???

I have put mine through the dishwasher loads of times with no ill effects, I would'nt worry about it.
Mostly I wash it in the sink though, as I ended up staining the white dishwasher racks yellow with tumeric and other spices in the old unit ;)

I had one of the 26cm ones on order from Amazon, but I have just cancelled it after watching the guy in Chutneys. I've ordered a 20cm one now which I appreciate is quite small but it is about what they were using there.

Trust me it'll be too small. If it's not too small come back and tell me and I'll eat my words with veg ghee on, but I speak as a man who ordered a 20cm meyer commercialware aluminium HT pan by mistake (thinking it was the 26cm version) and you won't cook a takeaway sized portion of curry in one. Remember the sides are tapered so the base dia is..... <trots off to kitchen with tape measure> ....only 15cm. In the interests of science I just filled mine with water from a 1 litre measuring jug. With water up to 1cm below the rim of the pan 300ml remained in the jug, so the workable capacity is no more than 700ml. Anyone know the volume of a standard takeaway main dish foil tray?

Can't quote you for foil, but for resealable plastic as used in Chinese t/a's, 500ml small and 700ml large.

I agree. I do have a 20cm Ali BIR pan, and your measurements are spot on. The tapered sides make it really difficult to keep the sauce in the pan and not all over the hob. I have a 20cm old frying with a base of about 18cm, with concave sides. This is now my pan of choice. It used to be non stick but most of that has worn off over the years, and it's basically now just an Ali pan, perfect for BIR dishes.

This look pretty good, right size, thick walled and with slightly higher sides. Price is good too. It doesn't have the curve into the base that I would prefer but other than that looks good.

I like the look of that a lot, Axe. High sides and a nice flat bottom. I've got the same one as Solarsplace linked to on the first page, but I am tempted to go for one of those at that price.

Axe I have the 31cm version of this pan and it's very good , my previous pan was a 26cm ' Omelet type pan but it was to easy to make a mess of the Hob when stirring the Curry vigorously :)

I shall be ordering two of the 24cm pan. The VAT and 6.00GBP is a small price to pay for the 'right' pan. ;)
Emin, I currently use a similar sized 30cm pan for making curries. But this I found to be far too big for single portions. I then tried a 20cm pan I have and that proved much better but not quite big enough. I do admit it caused alot more mess though. The 24cm pan is the closest representation of pans I have seen in the IG.

Know what you mean Axe a single portion looks a bit lost in there,probably something between 26-30cm with high sides would be perfect.

Not really sure why I want to get one anyway, I've had perfectly good results and am very happy using my Heavy duty 24cm copper bottomed Stainless Steel pan. ::) ;D

Horses for courses I guess, you pays your money and takes ya chance. ;)
The only other thing I can add, which I feel is quite relevant at least for me anyway, is that with a smaller pan the cooking oil goes further. 1 Chefs spoon of oil in a large pan is barely enough. This also equates to the amount of base used too. You need less to cook the ingredients and should therefore end up with a more desirable curry, if that makes sense.

hi guys well it arrived on thursday washed it straight away and cooked my vindaloo with it that night the missus who has been off curry lately tried some and loved it. so last night made a CT vindaloo for 2 and she moaned that it wasnot as thick as the nights before oops but still eat the whole lot! i love the pan and worth the 15.25gbp it cost with courier and VAT so it took 2 days to arrive. the only problem is the stainless steel chef spoon/s and the aluminium don't go so well :'(

hi axe possibly there already shiny silver dots appearing on the rimmer. didnot use it lastnight to cook my balti garlic chilli chicken tikka masala i used my trusty black steel pan that has a lovely ring to it.

Edit - I see they also sell various large spoons, Tawas and Karahis/Balti dishes etc. for reasonable prices.

I decided to order from them in the end as the pans were on offer, so ordered (to make the most of the single postage charge) -

ordered on 22nd and surprisingly arrived today, which is very good considering the Easter weekend.
So very pleased indeed.
Only slight downside was the unexpected delivery today, they said they would e-mail the shipping and tracking details but didn't. Luckily I was home.

I too am a happy man with a new pan! ;D
Walked past a new asian corner shop yesterday, had to check it out, and sure enough
there was an exact replacement for my battered old favourite curry pan.
In my element last night, knocking up a Naga Chingri.
Funny thing about the sticker describing it as a 9" - 23cm!
Didn't realize they took the measurement from the top of the inner rim
I always thought my old pan was a 24cm, just shows to go you!
It cost 14.99 and worth every penny.

What ever pan you decide NJ, 24cm is the size used in most BIR's. Hope this helps. ;)
EDIT=Actually I don't know this for fact personally, but it is the same size the IG use and the same size reported by several other members who have entered BIR kitchens.

Thanks Martin, will check out that site. Axe I was thinking of going for a 26cm pan because I'm not as skilled as BIR chefs and will doubtless slop the sauce over the cooker unless I have a little bit of spare capacity in the pan! My hob is electric, so I don't need to select a small pan so that gas flame can lick up the outside of it (possibly one reason why smallish pans are used in BIRs?)

NJ, it's more to do with portion size and the ability to cook the curry properly. In a larger pan you will need more oil and base to cook properly.
However, if your cooking a double portion (yourself and the wife), then the larger pan will be better suited.

To be honest that's why I went for the 26cm, as I always cook double portions.
I wouldn't go bigger though.

I've had this pan for a couple of weeks now. saw the price of the 24cm, 26cm is the maximum for me, any bigger tips over
I don't know of its any better than the wooden handled ones in the C&C, but the price was more or less the same

It looks pretty much the same to me except for the added advantage of the Alu handle being that, it's less likely to suffer from wear and tear, especially if you use the dish washer to clean it.

It looks pretty much the same to me except for the added advantage of the Alu handle being that, it's less likely to suffer from wear and tear, especially if you use the dish washer to clean it.

Didn't have you in mind when posting, I know you've got enough pans already mate. ;)
Just there seemed to be a renewed interest in people wanting Alu pans, after C2G was offering them for sale.
Thought it was a good price and from a major reputable seller in Amazon, so might be of use to some

Just a WARNING
Don't buy anything from cheapchefsclothing.co.uk, the site is not a going concern and shouldn't be still up and running.
After looking at prices elsewhere, I decided to chance it, because of the great price, and ordered an Aluminium Stewpot with lid.
Nothing happened for a week, no replies to my enquirees from their onsite message system, so I got in touch with the people the Paypal payment was made to.
They were actually the Site designers, not cheapchefsclothing.co.uk, and they informed me they were owed money from the owners of cheapchefsclothing.co.uk, and so it was no longer a valid running website.
I'm happy to say they apologised for any inconvenience caused, and immediately refunded my Paypal payment, and would look also into removing the site.
