Title: CHICKEN MALAYA

Hi All

I have been asked to make a chicken malaya which on reading an indian menu is basically a korma with the addition of some pineapple chunks and banana.  Is this correct??  If not, does anybody have a tried and tested recipe for it?

I am sorted on a Korma recipe.

Hi Barry
Like all traditional BIR dishes, it seems to vary from region to region and chef to chef
but in my experience a Malayan usually has Banana, sometimes Pineapple and even (back in the day) Lychee's.
In some restaurants its also garnished with a few Cashews and Golden Raisins.
Korma, Malayan and Kashmir are very close to each other, the different fruits, just separate them.

I agree,

I remember seeing this on the menu with banana in, and also with pinapple.(This was in the good old days when BIR's sold Jalebi and gulab jamen for dessert!!

bramble1976,

not had this dish for ages. there was no pineapple just a banana korma. i'm sure the pilau rice was coated in coconut flour (which is nice for a change for most dishes).

Locally the curry houses used to have pineapple in a Chicken Malayan and when they added banana to a Korma they called it Chicken Burma.

I actually watched Az cook one of these but I didn't take much notice of what he did. I only noticed at the end he was chopping up banana to put it it. If I can get a recipe I'll let you know.

this looks lush with the banana im not one for mild curries buy it makes a change once in a while  one i will def try
