How many members are "Cooking on Gas"
Just sifting through posts and wondering how many members "that post", are cooking curries
on electric or Induction (Magnetic) or even on traditional Aga hot plate.
Who's actually "Cooking on Gas"

I use electric ceramic and halogen hob and it seems to do the business for me :)

Originally electric; formerly Rayburn (Aga lookalike) and gas; now halogen and induction but made Greek coffee on chef's blowtorch (butane) yesterday !

On ceramic sadly. Just took a bit more time to find the correct temperature settings, but results are fine. Although it's impossible to blacken a wok on a ceramic hob (I have to go to the mother-in-law's for that), the lack of heat at the sides of the pan might affect the caramelisation since I cook in a fairly heavy wok.
I'll probably invest in an ali pan soon.

Electric here >:( . As somebody said, it's all about determining the settings. Still would prefer gas and would believe the best results will be obtained with it. Although results so far, encouraging - brilliant but inconsistancy reigns at the mo >:( ::)

My previous home with my partner (now ex-partner) had a gas hob with wok burner. I loved it. The house was sold in October and I'm now living in a rented cottage with an electric hob. Am getting on fine with that. I do miss the gas hob but don't miss my ex-partner.

Also, If the missus catches me holding the chefs' spoon and moving the pan like in the Zaal videos, on a ceramic hob, I'll be living under a bridge somewhere.

You're not alone, guys.
It was interesting to read in Julian's blog (he of Curry2Go fame) of the initial problems he had after upgrading his burners (full post here: http://www.curry2go-online.com/my-blog.html (http://www.curry2go-online.com/my-blog.html)):
"...Friday was a bit stressy as I burnt a few dishes (this cooker is much more powerful than the little 3 burner I had ) by Saturday afternoon I was "Cooking with Gas" literally as I had now got the hang of the new cooker (like going from a Robin Reliant to a Ferrari!!) good job as we were bombed out! All our regular customers gave us the thumbs up and I am sure the food even tasted better?

Seems that even those who knock out hundreds of curries a week need a bit of practice with cooking on higher heats.
Makes me feel a bit better about some of my less successful experiences in big burner world, anyway... ;D

cooking at heat - the best tip i found was to take the pan off the heat when needed to give more thinking time until it becomes 2nd nature

hi guys we have a leccy knob but i only use it if and its a big IF my ikcle gas camping stove with butane cannisters that throws out more heat than the leccy knobs does anyway at 2.2kW. so gas all the way and at 4 gas cannisters for a fiver and 1 1/2 hours on full power longer if you simmer LOL! i cook a curry 5 out of 7 nights am never disappointed!

You just reminded me that i have one of these portable stoves that i have never used :o. Now would seem like the perfect time to brush off the dust and give it singeing session. Where do you get your gas cannisters from Parker 21? That seems a good price :D Is theat 1 1/2 hours full power per cannister?

Great tip guys, I've been watching the YouTube videos of guys cooking with those little wok style pans and stirring and shaking, and you just can't do that with electric. I've got real old school solid metal hobs that are excellent for simmering, but it takes so long for them to heat up and cool down that I can't apply bursts of heat as required. The camping stoves are dead cheap and I can always get the canisters from the Asian shops or even from Aldi who get them in often.

i have been cooking on gas for 4 years, but was also a lecky guy before this :) The extra heat of gas is useful and improves flavour slightly. But i can still produce a similar tasting curry on electric , i am not convinced that high heat makes a huge amount of difference.
The high heat of gas does improve your cooking style, and that improves the final taste.
I actaully think my best curries are long slow cook curries done in a more traditional way in the oven with lid covering the pot for 5 hours. This really produces the wow factor for me.
Bir curries are a quick way to do a good curry, but i think some cr0 members are missing out by just doing bir curry all the time.

Good point, Dez - I'm a home craft-brewer and when it's my turn to host a brew day and I know that 15 club guys are going to turn up for the day I need something pre-prepared for lunch, and nearly always bung on a Pork Vindaloo or something similar.
I do everything BIR style, except for the pork which I cube, dredge in flour and fry till sealed, then tip everything (base sauce, masala, passata, vinegar, whole can of coconut cream (naughty) etc etc etc) into a big electric slow cooker the night before, and get up at 5am to turn it off, then re warm it for lunch and serve with masses of rice and a few packets of supermarket shrink wrapped garlic rotis etc. and a raita, the sounds at lunch are reminiscent of a porn movie :o
However for my own day to day, I like to do the fast and furious. ;D

Electric (halogen) hob here, used to cook on gas. I can't say that have I noticed a difference in the quality of food I cook or the method; I quite like the halogen hob, it's very responsive although obviously not as adjustable as gas.

I was watching a You Tube the other day, traditional Indian lady doing a chicken biryani, and she was using a portable induction cooktop :o - I never realised they existed.
Seemed to be doing a fine job.

i buy them from my local market in ashford, kent. open tuesdays, fridays and saturdays! but most hardware shops sell them per cannister at 2.95gbp :o emergency only! lol.

We have both gas and electric here since the 'norm' is to have two kitchens .. one in the house for use mainly in winter , spring and autumn and the second called a 'summer kitchen' is accessed from the garden and used (you've guessed it .. ) in the summer. The idea is that by not going in and out of the house all day the house stays cool even if outside is up around 40 degrees Celsius.
I've never used the gas hob for curries ( my wife would do her nut ) and I've always found the ceramic one great .. it gets really hot and is a piece of p*** to keep clean .. if only I had ceramic worktops , splashbacks and so on !! :)

I cook outside for the same reason Colin. The times I have cooked curry inside, the wife hasn't been pleased with the smell. Doesn't bother me at all. ;)
The side burner on the BBQ is way more powerful than the gas hob inside anyway, so it's all good.

I cook on an Electrolux gas stove.
Since reading posts on this site I now use the biggest ring, which I never used before.
There is a lot of splash stains around the pan, on the cooker top and work surface, due to the high heat.
But 'her in doors' doesn't nag about the smell (she burns candles the next morning) she does nag about the splashes of curry juices on my clothes which never comes out in the wash!!

I cook on a gas hob
When we hired a villa in Greece last year and I was heating up a curry I had smuggled in my suitcase I couldn't believe how terrible it was to cook on an electric hot plate not to mention cooking the rice!

I've heard of smuggling tobacco and hashish but never a curry :)
I can see the headline in The Sun as we speak....

I cook on an induction hob. I find it particularly helpful for rice and base sauce as the heat can be very finely adjusted.
The induction hob "boost" function is good for the initial frying as it adds a couple of kW to the normal maximum.

You must have a far better induction hob than me. Whilst I love my hob dearly, it lacks both very fine control (only ten steps, and the gap between steps is too large to get optimal cooking in a pressure cooker) and a boost function. That will teach me to buy electrical good from "a well-known down-market four-letter supermarket chain" !
