Title: Dadibhais Omelette Pans

Ordered four Black Iron Omelette Pans 10 Inch on Tuesday afternoon, got delivered on Wednesday very good service and brilliant customer service would highly recommend.

Seasoned the pans with vegetable oil and one quarter of an onion and half tsp of balti garam masala, got the pan on a really high heat until the pan just starts to go a dark colour then added the onion and stirred until just going soft then added the balti garam masala mix and stir fried until the spices go black then discarded and ran the hot water over the pan to clean it then placed back on a low heat until all the water had gone then added about 1 tsp vegetable oil heat slightly then wiped with a kitchen towel to cover all of the inside of the pan, finished pan now seasoned.
These pans are just perfect.

These pans are just perfect.

How do you know if you only took delivery a few hours ago? I suggest all you've proved so far is that they were delivered quickly, you rated the retailer's service and they look the part. Too many reviews on amazon and anywhere seem to be based on the initial excitement of a new toy arriving, well before any reasonable assessment can be made.

I hope they prove durable and that your favourable impression holds up, but how can you be certain? i.e. to "highly recommend" them at such an early stage?

George read the post, it was delivered Wednesday it is now Thursday. Check the pictures section, the new pan is the one with the madras in.

Am in the market for such a thing myself.

Was looking for something identical or as close as possible to the type we saw and that appeared in the Zaal Saag Bhaji video.

Cheers Unclefrank. I've got a couple of aluminium pans and a few carbon steel woks, but I've been wanting to try a black iron omelette pan for a while (especially for the dry style sag bhaji).

I wasn't planning on buying anything at all today, but when it comes to cookware something happens inside my head and my resolve just crumbles... [checks order confirmation...] Yep - apparently I've just bought one. Even with the delivery it's still great value at 13 quid.

Can't wait to start seasoning it. (Damn... I love seasoning pans...  ;D )

This place is only two mins away from my work didnt even know it existed :o
will definately be having a nosey and for the sake of a fiver think i will buy one of those pans been using a wok so been wanting to give these a blast. :D

No problem at all fellows forgot to add, once you have seasoned your pan and are going to cook your first curry in it just get the pan hot and add a ladle of base just in case you haven't got all the anti-rust coating off from washing and seasoning.
Salvador how do you season your pans?

Watched a Ching He Huang (easy Chinese) video on how to season a wok from her Easy Chinese: San Fransisco  show cant find that video but found this Walking You Through Seasoning a WOK (http://www.youtube.com/watch?v=hNPe5-swL-k#ws)

I've always used the traditional method for seasoning carbon steel woks, Unclefrank, so as black iron is exactly the same material I'll treat it the same. There are probably as many pan seasoning methods as there are base gravy recipes, but the below procedure has served me well:

First I give the wok/pan a thorough clean in soapy water to remove the protective coating, then wipe it dry with a cloth.

Next, I rub the whole inside surface of the pan with oil (some say groundnut is best, but I find any veg / sunflower oil is just as good. Anything but olive oil, really).

Then pour a good glug of oil in so it covers the base of the pan and put it over a medium to high heat on the hob or burner until the oil starts smoking a little.

Take off the heat, let the pan cool down a bit, wipe out the excess oil with kitchen towel, then repeat the process a couple more times.

And that's it. The pan is now seasoned and ready to go.

As it gets more and more use it builds up a patina as more layers of oil form in the pan, until it eventually turns black and becomes near as dammit non stick (I regularly fry eggs in my woks, which is the acid test I reckon).

Pleasure. And as the pan has just arrived (I see what you mean about the service, Unclefrank), here's what it should be starting to look like after a couple of oil/heat/smoke/wipe processes:

I'm going to give it one or two more goings over just because I enjoy it so much, but it's pretty much ready to start using here. After a while it will be black and have that lovely patina that good woks acquire after many culinary adventures...

Dammit. I wasn't planning on buying anything else for a while, but I like the look of those copper handis. Very nice indeed... (Must.... resist... must resist... )

From the menu, which is refreshingly simple, The Vine looks like a good place, too. Bit far for me, but next time I'm in the area I'll check it out...

Far looks exactly the same as the above pictures and seasoned the same too
It sure does stink the house out when you season it :)

Hi Currymonster

It certainly does indeed!

Ordered the same pan and a wok of similar material, very pleased with them. However, seasoning caused all sorts of smoke, eye watering, smoke alarms going off...

When you first use the seasoned pans don't forget to cook out some sacrificial ingredients first to remove the remaining seasoning oil such as some sliced onions. When cooked out, thrown them away and wipe the pan clean. Then you should be ready to go.

Good pans though, very pleased with them!

the spec of these pans is curious.

i have a "black" steel pan for dish frying - it will rust if i don't oil after use. it's a very sticky pan along the lines that curry2go described ie ali pans - it performs really well cooking main dishes. garlic for example really sticks to it though when frying - frying an egg for example would be a no no.

this new 8" omelet pan is also steel but very different - it does not rust and is not sticky at all. the garlic swishes around no trouble - don't even need a spoon to cook it. the packing gave no clue to what it is made of but for me it's not black steel unless my dish frying pan is not black steel although it was sold as.

hey ho. matters not i suppose. i'm really happy with both pans.

Yes I can't believe how good the quality is for such a low price
Thanks for the post seasoning tip, I believe giving the pan a gentle rub with salt before using gives it non stick properties, although not sure why :)
