Title: White Marinade
Post by: Micky Tikka on April 12, 2012, 06:32 PM
Recipe from chef Vineet Bhatia Book
100g mozzarella cheese grated
100g mature cheddar cheese grated
1 tbs ginger
2 tsp green chilli
3 tbs chopped coriander stalks
1 tsp ground cardamom
0.5 tsp white pepper
100ml single cream
6 tbs yoghurt
3 tbs oil
salt
Mix together in a bowl   Be careful with the seasoning as cheese has a high salt content

feel free to tweak I add a bit of mix powder and Garam masala also I just use Cheddar instead of both
I use this for chicken tikka once done add chopped coriander and a squeeze of lemon
please try you will be surprised it doesn't taste cheesy

Hi MT
Love this, My friends Restaurant serves the best Malai Tikka I've ever eaten.
A short marinade then cooked to order in the Tandor. So addictive :P

Try Philadelphia or similar soft cheese and serve with a Haryali sauce.
cheers Chewy

Hi MT
Haryali is all fresh Greens, it can be a sauce, a dip/chutney and when cooked with cream and coconut milk a delicious  Green curry.
I posted my recipe last year for the chutney which morphs into the sauce, great with Malai Tikka.

Ali Hussain, the guy in the video is one of my Chef friends, a good laugh and one of the Three Musketeers.
Meaning three of my friends that clean up and win all the Curry Chef Competitions, here in the Northeast.

Your Malai Tikka will go well in Ali's Haryali recipe, but I wouldn't bother with his Tomato Rose  ;D
