Title: tenderizing lamb for rogan josh

Hi, A couple of years ago, 'mickdabass' gave me advice  to tenderize lamb prior to making the dish.. simmering for an hour or so, unfortunately the first part of recipe with all the spices has been obliturated by a glass of wine... can anybody help. Many thanks Gatha
