Hi juju,
You will get best results if you use the powdered food colourings that you buy from Asian stores.

After you have cooked your rice water down any food colouring and run it in stripes across the rice, then leave covered in an oven for 30 minutes to 'set' the colours.

I just put a little food colouring on the back of a teaspoon and flick it over the rice before I put it in the oven, this way it just adds a subtle colour to the rice.
