Here is a chicken vindaloo, recipe here:

I now also chuck in a heaped tablespoon of prefried onion and use a scotch bonnet chili in place of so much chili powder. I find one finely chopped chili and a desertspoon of chili powder is just right.

To finish of a side of bombay potato, I haven't posted a recipe for this but it's very similar to the one on in2curry.

I wish more people would post photos of their curries......a picture paints a thousand words!.....the next best thing to smelling and eating them!

Just found this site and these pictures more than anything have inspired me to have a go at making my own BIR style curries!
Haven't decided which base to make first though - would you reccommend Darth's or Terry's (ifindforu's) if i was going to attempt your CTM?

I would suggest , based on experience that you try Darths' base for the more traditional BIR recipes...if you require something a little more sweeter , then try ifindforus ' .

If your new to the whole base sauce I would go for a simple and trusted sauce. I personaly use this one:

Terry's that you mentioned is also fantastic and Bruce Edwards is worth a mention.

Ta for that, will keep those in mind. Opted for Darth's to start off with though and just finished - looks and smells great! I think i'm going to try your recipe for CTM either tomorrow or Friday, will let you know how i get on.

Yeah experiment is the key try a few and find one you like, I went a year just making the exact same base time after time and now i'm back tweaking and experimenting again. For me thats half the enjoyment, trying to replicate my local BIR's as the few around me are all completely different!
