Lets Talk Curry / Curry Leaf plant
« on: November 10, 2017, 02:33 PM »
Has anyone grown the curry leaf plant - seems to be a few varieties available so would be interested to know which is the best one to buy, advice on who to buy from in the UK, and how to look after it (i.e. will it survive in a greenhouse)

Cheers :)

Lets Talk Curry / BBC 5live- talk about curries
« on: January 26, 2016, 01:56 PM »
There's a guy on the radio "Dave" and one called Abdul talking about the curry trade for anyone interested. Dave apparently wrote a book in 2010 about how to cook BIR Style (I assume it's known in the forum but
I didn't catch the title)

I know North Wales isn't famed for its Indian restaurants, but I found a truly terrible place last night, not only for its service but more importantly its food.  Forgetting the fact that I had asked for a lamb curry (after requesting a chicken on their specials be made with lamb), if it had been nice I wouldn't have minded but what was meant to be a hot and spicy curry was truly the blandest dish I have ever tasted.  Please anyone if you are ever in the area, stay away from this place and save your money.

Balti Dishes / Kushi Beef Balti - won the local curry club
« on: February 06, 2012, 09:38 PM »
Pictures of my Beef Balti - really was not only a great tasting curry but also the winner of our local curry competition:

Firstly the chopped tomato and spice mix that goes in the base

Base sauce

Pre cooked beef:

Base sauce blended (following addition of the tomato / spice mix)

Balti beef, from a couple of weeks ago - first attempt

And finally... the winning beef balti.  For the meat in this one I used braising steak and therefore I simmered for around 2hrs, adding some peppers and onions near the end to bulk it out a bit.  Was cooked the night before to let the flavours improve and did the trick

As most of you say to me the curry is very close to some of the best I have had - not quite getting there but certainly as good as if not better than the local takeaways.

And finallly what can I say but thanks to the forum for the win :)

BIR Main Dishes Chat / Kushi Balti precooked meat (beef..)
« on: January 21, 2012, 02:26 PM »
Advice please all, Razor in particular since you posted the recipes.  I have just precooked some beef using your kushi pre cooked lamb recipe.  There is quite an amount of liquid with the meat, do you pick the meat out when you are using to make a curry or would you add the "stock" as well...seems ashame to waste it I'm tempted to remove the meat and  simmer it down then add the meat back in ready for cooking some / freezing the remainder?

A mate has started a curry club locally, so people turn up with a curry, and they are marked by everyone to find the winner.  I want to win the next event  ;) .  The category is beef or vegetarian curry (not Indian specifically).  Any winning recommendations please?  I havent made BIR curries as yet as per this site, perhaps its time to start (not that you would find beef curries in many BIRs) Thanks!

May find this useful.  Despite the journalist copying the cooking with the chef to guide him, he still thinks the chef's is better - so technique playing it part
