Curry Videos / My new outdoor gas burner...
« on: July 25, 2017, 07:52 PM »
hHi guys sorry haven't been on for a while...Bought this a few months back.......The video itself is not a video tutorial on how to make a curry so it's pretty vague...There are captions just to let people know the list of ingredients...It's merely for demonstration purposes only.....I'm not sure if I should be posting this topic in this section...I apologise for any typing errors in the  video ... Enjoy... Boaby

This will not be in my EBOOK..it can only be viewed here, and yes yet again another base sauce, sorry guys..This has been scaled down from the 25k takeaway down to 1k that we now use in the takeaway by the new owners..I now cook from fresh and never freeze currys..Ive never been a fan of turning a curry base into a block of ice..I can't recall any takeaways who store their base in that way..To me it's never the same...I made 4 currys from this enough to feed 5 to six people

This sauce has a hint of sweetness which comes from using mango chutney and brown sugar
STEP 1
1 KG ONIONS
2 PLUMMED TOMATOES
A SMALL PIECE OF GREEN PEPPER
1 TSP CUMIN SEEDS
COOK UNTILL SOFT

STEP 2
SPICED OIL
4 CLOVES
2 BAY LEAVES
4 CARDAMON PODS
1 SMALL CINNAMON STICK
1 TABLE SPOON CORIANDER SEEDS CRUSHED
COOK FOR TEN MINUTES AND STRAIN..

STEP 3
ADD THE REMAINING SPICES AND OIL TO THE BASE ONCE REDUCED
1/2 TSP CHILLI POWDER
1 TSP GARAM MASALA
1 TSP TURMERIC
1 TABLE SPOON SALT
1 HEAPED TABLE SPOON OF BROWN SUGAR
1 HEAPED TABLE SPOON MANGO CHUTNEY
1 TABLE SPOON T/PUREE
1 HEAPED TABLE SPOON GARLIC AND GINGER PASTE
2 TABLE SPOONS CREAMED COCONUT
A FEW SQUIRTS OF LEMON JUICE

Pictures of Your Curries / The Glasgow buffet
« on: June 05, 2015, 10:46 AM »
Some pics for tonights buffet....note,, no oil to be seen just cleverly hidden...I start each curry with one chef spoon of oil plus some of the oil from my pre cooked chicken..The separation process began originally  in the base and blended back into the base..After you blend there is no further cooking.. bringing the oil back to the top again will produce an oily curry An oily curry maybe ok for home use but my costumers don't want to see any...Maybe it's just a Glasgow thing i don't know,..Some people may prefer it that way..The Cafe India Chain serve all their currys this way...It's what they're famed for when you go into one of their restaurants...    boaby

My old boss Mr Singh has left has now been taken over from the Cafe India chain of restaurants in Glasgow...The base now has some minor changes, the biggest being, a base with no visible signs of oil...Below is video of how they achieve this.....previously after i blended my base i would put it back on the heat again for the oil to seperate but there is no need ..The separation occurred earlier on in the process,so there is no need to start the process again, as explained to me by the cafe india chefs...The biggest complain from costumers in any takeaway is an oily curry...This method will guarantee no more oily currys......Sorry guys i'm not being ignorant or anything but i don't reply to my posts,, email only
